Ingredients:
1 cup (90g) Rolled oats
3 cups (375g) All-purpose/Bread flour
1/4 cup (80g) Maple syrup
1 1/3 cups (320ml) Boiling water
1¼ teaspoons Instant dry yeast
1½ teaspoons Salt
2 tablespoons (30g) Melted butter
Directions:
1. In a large mixing bowl, or in the bowl of an electric mixer combine boiling water, oats, maple syrup, butter and salt. Mix and let cool slightly.
2. Add flour, yeast and stir until dough forms. Knead the dough for 7-8 minutes.
3. Place the dough in a lightly greased bowl, cover and let rise 1 hour, until doubled.
4. Gently deflate the dough, shape it into a log. Place the log in a lightly greased 9 x 5-inch loaf pan. Cover the pan, let rise for about 1 hour or it's crowned about 1-inch over the rim of the pan.
5. Preheat oven to 350°F (175°C).
6. Brush with water and sprinkle some rolled oats on top of the loaf. Bake for 40-45 minutes. If the bread appears to be browning too quickly, cover with aluminum foil for the rest of baking.
7. Let cool completely before cutting.

Chia seeds and oatmeal healthy bread
Ingredients
Chia seeds 2 tablespoons
Sunflower seeds 1 tablespoon
Pepita seeds 1 tablespoon
Hemp seeds 1 tablespoon
Sesame seeds 1 tablespoon
Oatmeal (grind oats in a mixer) 100 gms or 1 cup
Optional if you want to add plain flour 100 gms
You can double oatmeal and exclude wheat flour
Water 1 1/2 cups or 150 mil
Yeast 1 teaspoon
Sugar 1 teaspoon
Salt as per taste 1 teaspoon
Mix all the ingredients ( if dough is still quite thick then add little more water).
Let it rest between 1-2 hours.
Bake at 200 degrees centigrade for 30 minutes or longer if you want to brown it more.
Let it cool down before slicing it.

STARTER / LEVAIN BUILD
30g Starter
30g Flour
30g Water
*Refresh a couple times prior using to achieve optimum results
(Takes approx 4-5 Hrs to PEAK @ 28C)
PREPARE SOAKER
45g Rolled oats
15g Flaxseeds
24g Butter (Salted)
60g Water
RECIPE
270g Bread Flour
30g Wholewheat Flour
230g Water
60g Starter
5g Salt
Extra Oats for coating
Bake in a pre-heated dutch oven at 250C @ 20 mins (lid covered), and final at 220C @ 15-20 mins (lid removed)
HOW TO MAKE SOURDOUGH STARTER:
NOTE:
⚠️ Kindly adjust the hydration accordingly based on your comfort level, more or less if necessary (10g +/-)
⚠️ Banneton basket size: 25cm
⚠️ Total bulk fermentation: 4.5 - 5 Hrs @ 27c

450g cottage cheese
1250g sunflower & pumpkin seeds mix
3 eggs
2 tbsp. of sesame seeds
Pinch of salt
4 garlic cloves

1 Egg
12g (1 tbsp) Sugar
5g (1/2 tbsp) Yeast
300g (2 cups) Bread flour/wheat flour
3g (1/2 tsp) Salt
15ml (1 tbsp) Olive oil
Egg wash
Sesame seeds
190°C (375°F) bake for about 15 minutes

1. Olive oil can be replaced with other cooking oil
2. According to your own oven and mold to change the baking temperature and time.
