How To make Herbed Oatmeal Pan Bread
1 1/2 c Boiling water
1 c Old fashioned oats
2 pk Active dry yeast;
1/2 c Warm water; (110-115 degrees
1/4 c Sugar
3 tb Butter or margarine; softene
2 ts Salt
1 Egg; lightly beaten
4 c All-purpose flour; 4 to 4-3/
Topping: 1/4 c Butter or margarine, melted
2 tb Grated parmesan cheese
1 ts Dried basil
1/2 ts Dried oregano
1/2 ts Garlic powder
Recipe by: TASTE OF HOME - OCT/NOV 95 In a small bowl, combine boiling water and oats; cool to 110-115 degrees. In a mixing bowl, dissolve yeast in warm water. Add sugar, butter, salt, egg, oat mixture and 2 cups of flour; beat until smooth. Add enough remaining flour to form a soft dough. Turn onto a floured board; knead until smooth and elastic, about 6-8 min. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 30 min. Punch dough down and press evenly into a greased 13x9x2" baking pan. With a very sharp knife, cut
diagonal lines 1-1/2" apart completely through dough. Repeat in opposite direction, creating a diamond pattern. Cover and let rise in a warm place until doubled, about 1 hour. Redefine pattern with knife tip. Brush with 2 Tablespoon melted butter. Bake at 375 degrees for 15 min. Meanwhile, combine Parmesan
cheese, basil, oregano and garlic powder. Brush bread with remaining butter, sprinkle with cheese mixture. Bake for 5 min. Loosely cover with foil and bake 5 minutes longer. Serve warm. -----

How to Make Light Herbed Bread Stuffing | Cooking Light
Recipe Makeover: Herbed Bread Stuffing with Mushrooms and Sausage
We've lightened this classic holiday dish so it has all the flavors you love and a lot less calories.
Making your own bread cubes is easy and yields delicious results. You can prepare the toasted bread cubes two to three days before Thanksgiving; store at room temperature in a zip-top plastic bag. If there's space in the oven, bake the stuffing while the turkey roasts. Otherwise, bake it in the morning, and reheat it while the turkey stands.
Preparation
Preheat oven to 400°.
Trim crust from bread. Cut bread into 1 1/2-inch cubes. Arrange bread cubes in a single layer on 2 jelly-roll pans. Bake at 400° for 10 minutes or until toasted.
Reduce oven temperature to 350°.
Cook sausage in a large nonstick skillet over medium-high heat 10 minutes, browning on all sides. Remove from pan; cut crosswise into 1/4-inch-thick slices.
Melt butter in skillet over medium-high heat. Add mushrooms; sauté 4 minutes. Combine bread cubes, sausage, and mushrooms in a large bowl.
Heat skillet over medium-high heat. Coat pan with cooking spray. Add onion, carrot, and celery; sauté 5 minutes or until lightly browned. Add parsley, thyme, sage, salt, and pepper; sauté 1 minute. Add to bread mixture. Combine eggs and broth, stirring with a whisk. Add to bread mixture; toss to coat. Spoon into a 13 x 9-inch baking dish coated with cooking spray. Bake at 350° for 45 minutes or until browned.

500g Stronge bread flour
300ml Lukewarm water
1 Tbsp yeast

✿ Veganlovlie Recipes / Yeast-free flatbread recipe: In one of my What I Ate Wednesday videos, I presented this oil-free sweet potato flatbread or roti filled with mashed avocados as what I ate for breakfast on that day ( I have had quite a few requests for the recipe since then. So, I thought I'd share the recipe; it is such an easy one with just two ingredients. Who doesn't like a 2-ingredient recipe?! One important procedure in this recipe is to use the sweet potato while it is hot. The heat makes a much softer roti.
By the way, white sweet potatoes would also work well in this recipe although the dough may require a tablespoon of water added in as white sweet potatoes tend to be a little drier than the orange ones.
These sweet potato flatbreads or rotis also keep well in an airtight container for the next day. Or you can also freeze them. When ready to use, just reheating them on a tawa or skillet and they will come back to their softness. They go well with sweet as well as savoury fillings. I do suggest you pair them with some spicy curry as their subtle sweetness makes a palatable contrast.

Gluten-Free options:
I have experimented with a store-bought gluten-free flour blend but it didn't work well. It had a blend of rice flour, tapioca flour, cornstarch and some gum. Some people have tried with chickpea flour+millet mix and they said they obtained some decent results although they had to do smaller ones because they were a bit more tricky to handle.
Other people have tried with coconut flour and reported that the rotis turned out good enough although they had to keep flouring them when rolling them out.
I suggest if you using one of these gluten-free flours/mix, you try roll then out in between 2 sheets of parchment or wax paper.
I haven't made these with any other gluten-free flour for myself but if I do find a gluten-free blend that works, I will update this.
