How To make Herbed Oatmeal Pan Bread
1 1/2 c Boiling water
1 c Old fashioned oats
2 pk Active dry yeast;
1/2 c Warm water; (110-115 degrees
1/4 c Sugar
3 tb Butter or margarine; softene
2 ts Salt
1 Egg; lightly beaten
4 c All-purpose flour; 4 to 4-3/
Topping: 1/4 c Butter or margarine, melted
2 tb Grated parmesan cheese
1 ts Dried basil
1/2 ts Dried oregano
1/2 ts Garlic powder
Recipe by: TASTE OF HOME - OCT/NOV 95 In a small bowl, combine boiling water and oats; cool to 110-115 degrees. In a mixing bowl, dissolve yeast in warm water. Add sugar, butter, salt, egg, oat mixture and 2 cups of flour; beat until smooth. Add enough remaining flour to form a soft dough. Turn onto a floured board; knead until smooth and elastic, about 6-8 min. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 30 min. Punch dough down and press evenly into a greased 13x9x2" baking pan. With a very sharp knife, cut
diagonal lines 1-1/2" apart completely through dough. Repeat in opposite direction, creating a diamond pattern. Cover and let rise in a warm place until doubled, about 1 hour. Redefine pattern with knife tip. Brush with 2 Tablespoon melted butter. Bake at 375 degrees for 15 min. Meanwhile, combine Parmesan
cheese, basil, oregano and garlic powder. Brush bread with remaining butter, sprinkle with cheese mixture. Bake for 5 min. Loosely cover with foil and bake 5 minutes longer. Serve warm. -----

About Uttapam
An uttapam (or uthapam, uttappam, etc.) is a type of dosa from South India. Unlike a typical dosa, which is crisp and crepe-like, an uttapam is thicker, with toppings. The name is derived from the Tamil words appam and utthia or uttria, meaning poured appam, because appam is cooked in a round-bottom pan, whereas utthia-appam is cooked on a flat skillet. Tamil ancient literature mentions it by name. The classic breakfast of Tamil residents consists of idli, dosas or uttappams mostly accompanied by sambar and chutney.
Uttapam batter is made of a 1:3 ratio of urad dal and rice. The rice can be a combination of parboiled rice and a regular variety such as basmati.[1] The lentils and rice are soaked overnight, ground and fermented until it rises. The batter is spread on a hot pan, generally circular, toppings spread on it and patted gently. Oil is dripped around it, flipped when it is golden-brown, oil dripped again, another flip to make sure the second surface is baked too. The uttapam is then ready to be served and eaten.
Uttapams are traditionally made with toppings such as tomatoes, onion, chillies, capsicum and coriander; other common choices are coconut, grated carrots and beets. They are often eaten with sambar or chutney.

Ingredients:
1 part of rolled oats
1 part of wholegrain rye flour
1/2 part of sunflower seeds
1/4 part of linseeds
1/4 part of sesame seeds
handful of pumpkin seeds
1 and 1/2 parts of water
1 to 2 tsp of salt
coarse salt
Preparation:
Mix all the dry ingredients in a bowl, add water and mix it with a spoon until you will get a runny dough, leave to stand for 15-20 minutes. Preheat your oven to 170 degrees, prepare good quality, NON-STICK baking tins by spraying a cooking fat over it (you can buy a low fat cooking sprays in Tesco for example), spread a thin 3mm layer over it and sprinkle coarse salt over the top (it's really easy to add to much, so be careful), bake for 45-60 minutes.
After 10-15 minutes of baking take the bread out and cut it to desired shape and size, it's really important to do it now, cause after it bakes, it will be impossible to do so, put it in the oven again. Open your oven once every 10 minutes to let the steam out, so your bread will be nice and crispy.
After it bakes separate it from the baking tins, break through the lines you cut it earlier and enjoy this healthy snack, you can keep it for up to two weeks in an air-tight container.
