How To make Banana Oatmeal Pecan Bread
1/2 c Margarine, room temperature
1/4 c Honey
2 Eggs
3 Bananas, mashed
1/4 c Buttermilk
1 ts Vanilla
1 ts Baking powder
1 ts Baking soda
1/2 ts Salt
1/2 c Oats
2 c Wholewheat flour
1 c Broken pecans
Preheat oven to 350F. In a medium sized bowl, cream together butter & honey till mixture is smooth. Beat in eggs one at a time. Stir in bananas, buttermilk & vanilla. When well blended, mix in baking powder, soda & salt. Blend in the rest of the ingredients. Turn mixture into a buttered loaf pan 9" by 5" by 3". Bake for 55 minutes. Cool on wire rack. Wet:
3 very ripe bananas
½ cup melted unsalted butter
2 tbsp neutral oil
½ cup granulated sugar
¼ cup greek yogurt / sour cream / or cream cheese
2 eggs
¼ cup coffee liquor
Dry:
2 cups AP flour
1 tsp baking soda
1 teaspoon kosher salt
Toppings:
2 tbsp turbinado sugar for toppings
¼ cup crushed pecans for toppings
Bake at 350F for 50 minutes
Make sure to grease a 9 x 5 inch loaf pan with butter or nonstick spray

* 5 large ripe to overripe banana
* 1 cup white sugar (or as desired)
* 2-2 ½ cups flour
* ¾ cup coconut oil
* 2 large eggs
* ½ cup buttermilk
* 1 tablespoon vanilla extract
* 1 teaspoon baking powder
* ½ teaspoon nutmeg
* 1/3 cup yogurt (optional)
* 1 cup Pecans (or as desired)
- Mash bananas, add eggs, sugar and mix
-Add vanilla extract, coconut oil, yogurt, buttermilk and mix
-Add baking powder, nutmeg, crushed pecans, flour and mix
-Transfer to a lined baking pan and top with more pecans as desired or other dried fruits or nuts
-Bake in a pre-heated oven @325 degrees Fahrenheit for 50 minutes or until toothpick inserted comes out clean or dry
-Slice once slightly cool and enjoy

Breakfast Banana Bars
Simple ingredients that make wonderful breakfast bars for toddlers!
Ingredients:
• 6 ripe bananas
• 3 ¼ cups of quick oats
• 1 tsp cinnamon
• 2 tablespoons of water
Directions:
Preheat oven to 400F
To a large mixing bowl add the peeled bananas and mash
Add in oats, cinnamon, and water. Mix to combine.
Line a square baking sheet with baking paper and pour in mixture. Press down firmly to compact the mixture into the tin.
Bake for 20-25 minutes
Remove from oven and let cool before cutting into bars
