BAKED BANANA OATMEAL RECIPE:
2 cups old-fashioned rolled oats
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
3 bananas 1 mashed, 2 sliced into rounds
1/3 cup egg whites (or 5 egg whites)
1.5 cups 2% milk or whatever type of milk you love
1 tsp vanilla extract
1 tbsp. coconut sugar optional

Instructions
Preheat oven to 375ºF and grease an 8×8-inch baking pan. In a large bowl combine the oats, baking powder, salt, and cinnamon. Set aside.
In a medium bowl mash one banana with the back of your fork until you have a baby food-like consistency. Mix in egg whites, milk, and vanilla. Combine everything together and then pour the wet ingredients into the dry ingredients and combine well.
Line the prepared pan with one sliced banana. Pour and smooth the oat mixture over the bananas and then top with the other sliced banana. Sprinkle sugar over the top and then pop in the oven for 40-45 minutes or until golden brown and cooked through.
Cool and slice into 4-6 pieces and enjoy.
NOTES
This recipe is naturally sweetened with bananas and uses no additional sweeteners (aside from the optional sprinkle of coconut sugar over the top). If you like your oats sweeter, drizzle with maple syrup when serving.

Ingredients:
3 cups (270g) Rolled oats
1 cup (80g) Quick oats
2 teaspoons Baking powder
1/4 teaspoon Salt
3 large Bananas
1½ cups (360ml) Almond milk/coconut milk
2 tablespoons (30g) Coconut oil
2 Eggs
1/4 cup (80g) Maple syrup
1 teaspoon Vanilla extract
1/3 cup (60g) Chocolate chips (optional)
Directions:
1. Preheat oven to 350F (175C). Prepare 8-inch (20cm) springform pan – line with parchment paper and grease the edges with butter.
2. In a large bowl mash the bananas, add eggs, milk, maple and vanilla extract. Whisk until combined.
3. In separate bowl mix rolled oats, quick oats, baking powder and salt.
4. Combine wet and dry ingredients, add chocolate chips, mix just until combined. Let sit for 5-10 to absorb the liquids.
5. Pour the batter into the pan and bake for 40-45 minutes or until golden brown.
6. Let cool on a wire rack for 10 minutes, then release from the pan and let cool completely.

INGREDIENTS:
* 2 3/4 cups oat flour OR grind 3 cups + 2 tbsp rolled oats (310 g)
* 1/4 teaspoons baking soda
* 2 tsp baking powder
* 1/4 teaspoon fine salt
* 2 eggs
* 1/4 cup unsweetened oat milk (60 g) or any type of milk
* 1 1/3 cups mushed banana (400 g) about 3,5 large bananas
* 1/3 cup honey or maple syrup (113 g)
* 2 teaspoon cinnamon
INSTRUCTIONS
1. Preheat oven to 400F (200 C). Line a bread pan (8x4 or 9x5 inches) with parchment paper, or lightly grease with cooking spray. Set aside.
2. Mix dry ingredients. Grind oats in a blender or food processor until they reach a flour-like consistency. Add in cinnamon, baking soda and baking powder, and whisk until the mixture is evenly combined. Set aside.
3. Mix wet ingredients. In a separate large mixing bowl, whisk together the eggs, milk, mashed bananas, honey until evenly combined.
4. Fold the dry ingredients in with the wet ingredient mixture, and stir until the mixture is just combined. (Try to avoid over-mixing.) Let the mixture sit for 5 minutes
5. Pour the batter into the bread pan and spread it out evenly.
6. Bake for 30 minutes at 400 F (200 C) Don’t open the oven!, then reduce the heat to 325 F (160 C) and bake another 15-20 minutes, until a toothpick inserted in the center of the bread comes out clean. Remove pan from the oven and place on a cooling rack for 10 minutes.
7. Serve warm. Or let the bread cool to room temperature, then store in a container for up to 3 days, or freeze for up to 3 months.

For the cake:
120g Rolled oats
1 cup (240ml) Milk, hot
2 Ripe Bananas (200g)
2 Eggs
3 tablespoons Cocoa powder
1 teaspoon Baking powder
For topping:
100g Dark chocolate
1/4 cup (60ml) Milk
Nuts of choice
Directions:
1. Make the cake: Preheat oven to 180C (350F). Grease a 8-inch (20cm) round pan and set aside.
2. In a large bowl, place rolled oats, pour in milk and allow to soak for 15 minutes.
3. In a separate bowl, mash bananas, add eggs and whisk until combined. Add cocoa powder, baking powder and mix until combined. At this stage you can add sweetener to make the cake a bit sweeter.
4. Pour soaked oats into the bowl with mashed bananas and mix until combined.
5. Pour the batter to prepared pan and bake for 25-30 minutes or until
6. Allow to cool for 5 minutes, then release from the pan and allow to cool completely.
7. Make the topping: chop the chocolate and transfer into a heatproof bowl. pour in hot milk, allow to sit for 1-2 minutes and mix until melted and smooth. Drizzle the chocolate over the cake.
8. Chop the nuts and sprinkle over the cake.
9. Serve and enjoy!

BAKED BANANA OATMEAL CUP RECIPE
3 cups rolled oats
2 teaspoons baking powder
1 teaspoon cinnamon
1/8th teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 cup mashed banana (2-3 bananas depending on their size)
2 pastured eggs
1.5 cups of unsweetened almond milk (or any milk you prefer)
2 tablespoons mini chocolate chips
Preheat oven to 350 degrees F.
Spray a 12-cup muffin tin with cooking spray or coat it with coconut oil or butter.
In a large bowl combine oats, baking powder, cinnamon, nutmeg, and salt.
In a separate bowl mix together mashed bananas, eggs, and milk until well combined.
Pour the milk mixture over the oat mixture and stir well to combine.
Evenly divide the oat mixture between all 12 muffin cups and then top each one with a sprinkle of chocolate chips.
Bake for 20-25 minutes or until set and cooked through. Allow to cool and then store in an airtight container in the fridge for up to a week.
Recipe Notes
*I like these muffins best warm or room temperature so if I am eating them from the fridge, I will either heat them in the microwave for 30-45 seconds or pop them in the toaster oven until warm.
*I rely on bananas to keep this recipe naturally sweet. If you like a sweeter flavor you can add a couple of tablespoons of brown sugar or coconut sugar along with the dry ingredients.
I top each muffin with chocolate chips because my kids demand them. Feel free to use other mix-ins like blueberries, walnuts, raisins, or raspberries. Stirring them into the batter is certainly an option if you want more flavor through the muffin cup.
