How To make Wheat Soy Sesame Bread
2 tb Baking yeast
2 c Lukewarm water
1/4 c Oil
1/4 c Sweetener
1 t Salt (optional)
3/4 c Ground sesame seeds
1/2 c Soy flour
2 tb Soy grits
4 c Wholewheat flour
In a large bowl, dissolve yeast in water. Add remaining ingredients. Turn out onto a floured bowl & knead till elastic. Add more flour as necessary. Place dough in large bowl, cover & let rise till doubled in size. Punch down, knead for 3 minutes, adding more flour as needed. Shape into 2 loaves & place in oiled loaf pans. Let rise again till nearly doubled. Bake at 350F for 30 minutes. Should sound hollow when done.

Sesame Toast
bread flour 250g
salt 5g
yeast 4g
sugar 15g
milk powder 10g
water 160g
black sesame powder 25g
butter 20g
black sesame 20g
milk (for brushing to top)
1. In the mixing bowl, add water, flour, salt, sugar, milk powder, black sesame, and yeast. Make sure the yeast is not in direct contact with sugar or salt.
2. Mix on medium speed for 4min and low on 7min until gluten development. Add sesame and pieces of butter and mix until the butter is incorporated. Cover and let the dough proof until doubled in volume.
3. Gently release the air in the dough and divide it into 3 equal portions. Shape into balls, cover, and let rest for 20min. Shape them into rolls and place them into a greased toast box.
4. Let the dough proof at 38C with 75% humidity until the pan is 90% full. Brush the top with milk and bake in preheated oven at 170C for 28min or until fully cooked.
4. Remove from the mold and let cool on a cooling rack.

Black Sesame Coupé-Soft Bread Rolls[Gourmet Apron 416]
===== Ingredients =====
-For dough
All purpose Flour 200 g
Whole wheat flour 100 g
Sugar 1 Tbsp
Active dry yeast 1/4 Tsp
Salt 1/4 Tsp
Milk 100 ml
Heavy cream 100 ml
Butter 30 g
===== Recipe =====
Warm water, sugar, yeast into bowl and let activate yeast for about 5 minutes.
Put flour, sugar, salt into a large bowl and pour yeast mixture.Add butter.
Mix until all dough come together.
Knead by hand until smooth surface.
Cover dough and keep to warm place(I keep inside of oven. just turn on the light)
Let rise until double in size about 50-60 minutes.
Stretch the dough.
Divide the dough 4 pieces & roll it.
Let it rise until double in size.
After 30-40 minutes.
Preheat oven for 190°C or 357°F.
Bake for 20-25 minutes.
