How To make Entenmann's Pound Cake
WALDINE VAN GEFFEN VGHC42A:
1/2 pound Real butter or margarine
2 cups Powdered sugar
3 large Eggs
1 2/3 cups Flour
1 tablespoon Lemon extract or vanilla
Preheat oven to 325~. Spray an 8-1/2" Pyrex loaf dish with Pam. Cream butter with sugar on high speed of mixer for 5 minutes. Add 1 egg and then a little flour, beating 2 minutes. Add 2nd egg and half of remaining flour and beat 2 minutes. Add 3rd egg, rest of flour and extract, beating 2 minutes. Spread thick and creamy batter evenly in prepared loaf dish. Bake 65 minutes or until tester inserted into center comes out clean. Cool in baking dish on wire rack 30 minutes. Remove from dish. Slice 1/2" thick. If freezing, be sure to slice before freezing loaf. Thaw to use within 6 months. Source: Gloria Pitzer

Recipe:
8 eggs separated (at room temperature for 30 minutes)
1-1/3 cups softened butter at room temperature (I used salted)
2-2/3 cups sugar
zest of 1 large lemon
2 teaspoons vanilla extract
1/2 teaspoon almond extract
2 cups of all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon cream of tartar (optional)
1/2 teaspoon ground cinnamon (may add 1 teaspoon for more of a cinnamon flavour)
1/2 cup milk
Icing sugar for dusting cake after baking.

Copycat Entenmann's Chocolate Chip Crumb Cake Recipe
This chocolate chip crumb cake recipe is a copycat of the Entenmann's classic.
Growing up on Long Island we always had Entenmann’s Cakes, Cookies and Donuts and still to this day I can’t walk by them in the grocery store without contemplating buying every single one. Its just so nostalgic! If you don’t know the brand, you’re missing out! My favorite one was always Chocolate Chip Crumb Loaf, its moist and fluffy and you get the perfect amount of chocolate chips in every bite. The crumb topping has a hint of cocoa powder and the perfect amount of buttery crunch. You are sure to enjoy this cake for breakfast, dessert or just a snack! I know I will be baking this time and time again! It’s a must!

Ingredients-
Cake-
1 Stick (1/2 Cup) Unsalted Butter, Softened
1/3 Cup Canola or Vegetable oil
1 1/4 Cups Granulated White sugar
2 Large Eggs
2 Teaspoons Vanilla Extract
1 Cup Sour Cream
2 Cups Cake Flour (NOT self-rising) (I use Swan brand, it comes in a red box)
1/2 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
3/4 Teaspoon Fine Table Salt
1 1/2 Cups Semi- Sweet Chocolate chips (You can also use Mini Chips too) (Toss the Chips in 1 Tablespoon of Flour just to coat, this prevents them from sinking to the bottom of the cake)
Crumb Topping-
1/4 Cup Plus 2 Tablespoons Granulated White Sugar
1/4 Cup Plus 2 Tablespoons Dark Brown Sugar
2 Tablespoons Cocoa Powder
1/8 Teaspoon Fine Table Salt
1/8 Teaspoon Cinnamon
1/4 Cup (Half a Stick) of Unsalted Butter, Melted
3/4 Cup Plus 2 Tablespoons Cake Flour (NOT self-rising) (I use Swan brand, it comes in a box)
Garnish-
1/3 Cup Mini Semi Sweet Chocolate Chips (You can use regular size too but the mini sprinkle nicely)
Confectioners Sugar for Dusting
