How To make Pear Pound Cake
8 tb Unsalted butter,, at room
-temperature 1 c Sugar
1 t Vanilla
1 1/3 c Allpurpose flour
pn Of salt 1 t Baking powder
pn Of ground nutmeg 1 lg Egg
1/2 c Buttermilk
2 sm Pears, peeled, cored, and,
-coarsely chopped 1/4 c Coarsely chopped pecans
Preheat the oven to 350 degrees. Butter an 8 x 5inch loaf pan. In a mixing bowl, cream 6 tablespoons of the butter with the sugar and the vanilla until light and smooth. Sift together the flour, salt, baking powder, and nutmeg and toss together until evenly mixed. Add half of the flour mixture and the egg to the butter mixture and mix well. Add the rest of the flour mixture and the buttermilk, beating them in well. Fold in the pears and the pecans. Scoop the batter into the prepared pan and bake for about 45 minutes, or until the center is firm and golden and a skewer inserted into the center comes out clean. Cool on a rack for 10 minutes, then turn out of the pan and finish cooling. When cool, invert onto a serving plate and cut into slices. Ingredients for baking homemade fresh pear bread :
3 large eggs, room temperature
1-1/2 cups sugar
3/4 cup vegetable oil
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 cup chopped walnuts
4 cups peeled ripe pears (about 4 medium pears)
1 teaspoon lemon juice
Instructions for making pear bread from scratch:
- First in a large bowl, add your eggs
- Followed by adding your sugar
- And now add your vegetable oil
- Now add your vanilla to the bowl
- Mix everything together
- Now get yourself a separate bowl
- Start by adding your all-purpose flour
- Followed by your baking powder
- And also your baking soda
- As well as your ground cinnamon
- Season lightly with your salt
- Now mix everything together
- You can now combine the contents of both bowls
- On a baking sheet add you walnuts
- Toast your walnuts in the oven
- Now peel your ripe pears
- Now remove the cores and stems from your pears
- Now chop and dice all your pears
- Add your lemon juice to the pears
- Finely chop your toasted walnuts
- Now combine everything together
- Mix well until completely combined
- Now in a greased dish add your pear bread batter
- Bake at 350F for 55-60 minutes

Spiced Pound Cake with Poached Pears
Learn how to cook tea cake with spiced pears for autumn and winter tea time.
If you don’t want to use wine, replace it with grape juice.
Ingredients (for cake 11*20*4):
Poached pears
Pears – 3 pcs
White wine or grape juice – 150 ml
Sugar – 1 tbsp
Honey – 1 tbsp
Orange zest – 1 orange
Orange juice – 1 orange
Cinnamon – 1 tsp
Clove – 3-4 pcs
Cardamom – ½ tsp
Ginger – ½ tsp
Vanilla pod – 1 pc
Pound cake
Milk – 250 ml
Honey – 20 ml
Clove – 2-3 pcs
Cinnamon – ½ tsp
Vanilla extract - ½ tsp
Ginger - ½ tsp
Nutmeg – ¼ tsp
Orange zest – 20-30 g
Black pepper - pinch
Nuts – 50 g
Sugar – 50 g
Butter – 170 g
Honey - 170 g
Whole egg – 2 pcs
Brown sugar – 150 g
Flour – 200 g
Buckwheat flour – 120 g
Baking powder – 5 g
Salt - pinch
Preparation:
Poached pears
Mix wine, sugar, honey and all spices in saucepan. Heat them without boiling. Peel the pears and cut the seeds out. If you’re going to use whole pears they should fit the baking mold and be the same size. Put pears in spicy wine so that they’re fully covered with liquid.
Cover with wrapping paper in contact and leave to infuse for at least a day, better two.
After that strain wine through a sieve, if you’re going to drink it later.
Dry the pears with paper towels.
Pound cake
The day before cooking, heat the milk with all spices, zest and honey and leave overnight to infuse.
Preheat the oven to 180 C.
Whisk butter with brown sugar and honey. Add eggs, stirring well. Add all dry ingredients and warmed milk. Pour dough in baking mold. Then put three pears in it. If you’re using cubes of pears instead of whole pears, previously mix them with dough.
Sprinkle caramelized nuts on top. Cake 3-4 cm high, bake for nearly 30-40 min. If it’s necessary, bake with oven door opened for the last 5 min to let the steam blow off.
Allow to cool before serving.

2 tsp (8 g) Baking Powder
1/2 tsp (2.5 g) Baking Soda
1/4 tsp (1.5 g) Salt
Icing/Powdered Sugar for dusting
* It is very important to PREHEAT the oven. Bake when oven reaches the right temperature.
* All oven are not the same. If toothpick inserted in middle of cake comes out clean, cake is done.
* Mix dry ingredients and wet ingredients until JUST combined and dry flour is no longer visible. Do not overmix the batter or the cake will be dense.
