Eggnog Cake Recipe from Scratch - Easy & Delicious | Baking Holiday Desserts
Today, I’m making my eggnog cake recipe from scratch. It’s easy and delicious, so if you enjoy baking holiday desserts, you’ve come to the right place! This egg nog cake recipe can easily be made from scratch. In fact, it's so delicious, creative, unusual, easy to make, and best of all, your guests will love it! INGREDIENTS
► Eggnog Cake:
2 1/4 cups all-purpose flour
2 1/4 tsp baking powder
3/4 tsp salt
3/4 tsp nutmeg ground
1/2 tsp cinnamon ground
3/4 cup unsalted butter room temperature
3/4 cup granulated sugar
3/4 cup light brown sugar packed
3 large eggs room temperature
1 1/2 tsp vanilla
1 1/4 cup eggnog room temperature
► Rum Simple Syrup:
1/2 cup water
1/2 cup granulated sugar
1 Tbsp rum
400 g sponge fingers
250 ml milk
a little rum
5 tbsp icing sugar (more or less, according to taste)
coffee (optional)
► Cream Cheese Frosting:
1 1/2 cup unsalted butter room temperature
8 oz cream cheese full fat, room temperature
4 1/2 cups powdered sugar
1 1/2 tsp vanilla
3/4 tsp nutmeg * ground, optional
► White Chocolate Ganache:
3 oz white chocolate chopped
1 oz heavy whipping cream or eggnog

Eggnog Layer Cake Part 2
Yields: 12 servings
Ingredients:
2 1/3 cups flour
1 tbsp. baking powder
½ tsp. nutmeg
¼ tsp. salt
2/3 cup butter, softened
1 ½ cups sugar
3 egg yolks
1 cup eggnog
3 egg whites
Creamy Eggnog Frosting
Preparation Directions:
~ Grease and flour 2 9-inch round baking pans. In a medium bowl stir together flour, baking powder, nutmeg, and salt. Set aside.
~ Beat butter in a large mixing bowl for 30 seconds or until softened, add sugar; beat well. Add egg yolks, one at a time, beating after each addition, until combined. Alternately add flour mixture and eggnog, beating after each addition, just until combined.
~ Whip egg whites in mixing bowl until they form stiff peaks. Gently fold egg whites into cake batter. Pour mixture into prepared pans.
~ Bake at 350 degrees for 25 to30 minutes or until a toothpick inserted into the center comes out clean. Cool pans on wire rack for 10 minutes then remove cakes from pans. Cool completely. Frost with Creamy Eggnog Frosting.
Eggnog Cake with Bourbon Icing | HOLIDAY TREATS
Bourbon Icing for cake is the gift that keeps on giving. I use it on my chocolate bourbon banana bread, and again here. It's the perfect holiday treat and I can't get enough of this bourbon sugar glaze! But let's talk about eggnog cake. It also has bourbon in it (not quite enough, if you ask me).
This recipe was passed along to me, and I have to apologize to the giver because I am a TERRIBLE baker. But, this recipe is wonderful. I made a slight variation the second time I made it, and it took my dry version to a moist, delicious holiday treat. That is the version I am listing below. They key? Butter. And Bourbon. Pretty sure those are the keys to every kingdom though...

EGGNOG CAKE
1package yellow cake mix
2 eggs
1.5 c eggnog
1/2c butter (softened)
4-6oz bourbon (depending on your tastes)
1/4 tsp ground or grated nutmeg
Preheat oven to 375. Combine all ingredients until wet and dry are completely incorporated. Pour into a greased, floured bundt pan, and bake at 375 for 45 minutes. Remove from oven and let cool for 20 min in pan, and then flip on to rack to finish cooling
BOURBON ICING FOR CAKE
1c Confectioners Sugar
2oz Bourbon
Simply whisky together and pour over cake after it's cooled.

Nothing says Christmas is almost here like a cup of eggnog! This holiday chocolate eggnog cake is like enjoying eggnog in cake form! I add eggnog into my 'Simple Vanilla Cake' recipe and then soak each layer with more eggnog! Use my 'Chocolate Buttercream' frosting recipe for the best combination of flavors! I like to top this simple cake off with snowflakes made of white chocolate and edible pearls for a winter-y finish!
