Corned Beef Hash and Eggs on the New Weber Griddle - Leftover Corned Beef Recipe!
This corned beef hash and eggs might be my new favorite griddle breakfast recipe to make! We used leftover corned beef, potatoes, onions, and a few carrots that had been cooked in a Dutch oven in the oven the night before.
Just rouch chop everything and mix it all together in a large bowl. Season with salt and pepper, and cook the corned beef hash on the griddle at a low temp so that it can reheat all the way through and the potatoes get nice and crispy like hash browns.
Cook up some over easy eggs to serve on top of your corned beef hash, and you've got one fantastic breakfast on the griddle, and a great way to use leftover corned beef!
To make the corned beef brisket, we cooked the corned beef, chopped onion and baby carrots with about water that came up half way up the beef in the oven at 275 degrees F for about 3-4 hours uncovered. Then we added two whole baking potatoes to the pot, put a lid on it, and turned the oven temp down to 225 degrees F. Cook for 2 more hours, then remove the pot from the oven and allow it to cool. Refrigerate corned beef, potatoes, carrots, and onions overnight in all the juices.

How to Make Hash Browns - Diner Style Restaurant Hashbrown Recipe
Learn how to make crispy hashbrowns just like you get at a diner! These are super simple and only require a real potato, butter, oil and a technique. That's it. Enjoy!
For one serving of hash browns:
1 (4-5 ounce or 110-140 grams) russet potato
2 Tbsp vegetable oil
1/2 Tbsp butter or margarine
Wash and peel the potato. Grate or shred on a box grater or food processor. Do so into a bowl of water to prevent oxidation. Drain and rinse until water runs clear. Spread shredded potato out onto paper towels or a clean kitchen towel. Pat dry and let air dry for 5-10 minutes. In a small frying pan, add oil and butter. Heat over medium-medium high heat. When butter solids start to brown, add shredded potatoes. Cover with a lid and cook for 5 minutes without lifting the lid. When time is up, remove lid, season with salt and pepper and flip. Continue cooking for an additional 1-2 minutes. Makes 1 serving of hashbrowns. Enjoy!

Mexican Chorizo Breakfast Hash With Potatoes And Fried Egg Sunny Side Up Recipe
Mexican chorizo breakfast hash is an incredibly satisfying recipe that is versatile enough for you to customize to your tastes! Join Eric from Simply Elegant Home Cooking as he demonstrates his version of this classic dish! One of the best things about cooking hash is that there are no limitations in regards to the seasonings and ingredients. Today we use chorizo, but really any type of meat works and there are even vegetarian recipes as well. Also, just about any vegetables can be used. This is a great dish to use up whatever you have on hand in your fridge, including left overs. Some of the most common vegetables Eric uses are onion, bell pepper, cherry tomatoes, mushrooms, and spinach. However, feel free to add ANYTHING you like when you cook your own Mexican chorizo breakfast hash! One of the most important steps is the cut the potatoes very small. This is the only way to get a good, crispy result in the pan while still having a tender and fully cooked interior of the potato.
If you enjoy this dish, you can experiment with other types of hash. The dish works equally well with Italian sausage in lieu of chorizo and will Italian spices. Also, if you enjoyed this video, be sure to like, comment, and SUBSCRIBE to Simply Elegant Home Cooking! Thanks for watching!
