I hope you're all having a fab day! Today I'm making corned beef hash :) this is ridiculously tasty and such a fantastic family meal! It's relatively inexpensive to make too. Lovely served with a fried egg on top....I'm not a fan of eggs, so I just like some crusty bread with butter or a couple of oat cakes. I've listed everything I used down below.

Serves 4
I used:
2 Large onions (thinly sliced)
About 600g of floury potatoes (cubed with the skin on) such as Maris Piper or King Edwards.
700ml beef stock
A generous knob of butter
400g Corned beef (I just used canned) cubed
200g Frozen peas
200g Cabbage
2 Tablespoons grain mustard
2 Tablespoons Worcestershire sauce
Salt & pepper to taste
Chopped chives
***Optional fried egg, spring greens or bread & butter to serve***

Ingredients:
1 part leftover cooked corned beef
1 part leftover cooked cubed potatoes
1 part diced onion
15-30 mL (1-2 Tbsp) butter
Pepper to taste
Dry mustard to taste
Paprika to taste
Method:
You will need essentially equal-dish amounts of corned beef, potato, and onion.
In a heavy frying pan over medium heat, melt 1 Tbsp of butter and add the onion.
Cook onion until translucent and just starting to brown.
Add in diced potato and fry until potato starts to brown.
Add more butter if needed.
Dice the cooked corned beef.
Add the diced corned beef to the pan and stir to incorporate.
Pat into an even layer and season with pepper, mustard, and paprika to taste.
Allow to fry undisturbed until the bottom is golden brown.
Turn and stir, then pat into an even layer and check the seasoning.
Add pepper, mustard, and paprika if needed.
Cook until the bottom is golden brown.

Corned Beef Hash Recipe. How to Make Corned Beef Hash
Corned Beef Hash is my favorite breakfast dish. For this recipe, We use some left over corned beef, red skin potatoes, and carrots.
2–3 red skinned potatoes, precooked and diced
2 cups corned beef or pastrami, precooked and diced
1 cup carrots, precooked and diced
1/2 yellow onion, diced
1/2 green pepper, diced
3 eggs
2–3 tablespoons, olive oil
garlic powder to taste
coarse salt and pepper to taste
I used a 10 Cast Iron Skillet.
