Great taste from simple ingredients! Light dessert for breakfast in 5 minutes! The recipe is simple and quick, but very tasty. Easy dessert recipe in 5 minutes. All I can say is that it was over very quickly, and I will definitely do it again soon.
Ingredients:
130 g oat flakes(gluten free) (1 1/2 cup)
240 ml hot water (1 cup)
leave to soak for 5 minutes
2 eggs
30 g(2 1/2 tbsp) sweetener(stevia/or your choice)
1 tsp vanilla extract
120 g yogurt (1/2 cup)
50 g melted and cooled butter(1/4 cup)
1 apple
80 g blueberries (2.5 oz)
7 g baking powder (1/2 tbsp)
20 x 8 cm baking form(7.9 x 3.1 inch)
bake for 50 minutes at 180°C/ 360°F

Today I will be demonstrating how to make an amazing Italian Sour Cream Apple Cake! So Simple & Delicious! You will have to go for seconds.

3 medium apples cubed ( Approx. 2-1/2 cups)
Juice of 1/2 of a lemon (adding the zest is optional)
2 eggs
1-1/4 cups sugar
1 cup of sour cream
1/2 cup vegetable oil
2-1/4 cups all purpose flour
1/4 teaspoon cinnamon
2 teaspoons of baking powder
1/4 teaspoon of salt
1 teaspoon of vanilla extract
approx. 1 tablespoon of icing sugar for dusting.

Apple Cake (The Secret to the Best Texture Is…)
Apple Cake
This recipe is adopted from Oshpaz Kelin Apple Cake:
October 2023 update: I've improved the cake batter and made a new video about it: In that video I use plums, but you can use apples or other fruit. Additional testing also showed that fewer apples (4 instead of 5) results in better cake texture.
Streusel Topping:
16g unbleached all-purpose flour
26g granulated sugar
15g cold butter
Mix together with fingers until it looks like bread crumbs. Put in the fridge until needed.
Cake Batter:
4 apples (about 800g before peeling and coring)
3 eggs (ideally around 85F, but at least 70F)
2.8g salt (1 tsp Diamond Crystal Kosher or 1/2 tsp Table salt)
200g granulated sugar
300g sour cream
1 tsp vanilla extract
230g unbleached all-purpose flour
15g baking powder
Preheat the oven to 350F (180C). Peel and core the apples. Cut them in half pole to pole and then slice. Butter a 13x9 (33x23cm) baking dish.
Put the eggs and salt into a bowl of a mixer and beat on high with a whisk attachment until very foamy, about 2 minutes. Add the sugar gradually on low speed. Turn up the speed to high and beat until very pale and thick, about 3 minutes, scraping down as needed. Beat in the sour cream and vanilla.
Sift the flour and baking powder. Fold into the egg mix in 3 additions using a rubber spatula (you can start it on very low in the mixer and finish with a spatula). Don’t mix too much. There should be no streaks of dry flour, but little lumps are ok. Fold in the apples. Pour into a buttered 13x9 pyrex dish. Sprinkle with the streusel topping.
Bake in the middle of the oven for 50 min or until the tester comes out clean. Let cool for at least 1 hour. Leftovers will keep till the next day, but the top crust will lose its crispness. If that happens, pop under the broiler just until it crisps up, about 1 min.

It's time for another vintage recipe. Since my apple tree was loaded this year, I thought it would be fun to find a vintage recipe using apples. The Cooking Magic cookbooks did not disappoint. Hope you enjoy this vintage recipe video!

Sour Cream Apple Roll-Ups
Melt & set aside to cool 2 TBSP butter/margerine
Sift together into a bowl
1 1/2 cups flour
3 TBSP sugar
2 tsp baking powder
1/2 tsp salt
Beat until thick and piled softly
1 egg
Beat in the cooled butter and
1 1/2 cups milk
Combine egg mixture & dry ingredients. With rotary beater, beat until smooth and well blended.
Wash, quarter, core, pare and chop finely
1 large apple
Add the apple to batter and blend until apple is evenly distributed.
Heat 6 inch skillet, grease slightly with butter/margarine.
Spoon about 1/4 cup batter into skillet. Spread evenly with spoon. Cook pancake over medium heat until lightly browned, turn and brown second side. Keep pancakes warm in the oven while remaining pancakes are cooking.
Fill pancakes with sour cream, wrap pancakes around filling to form rolls. Sift confectioner's sugar over roll-ups.

Sour Cream Apple Pie Recipe | Easy Apple Cake
This Sour Cream Apple Pie is a delicious dessert hardly to resist and forget. A buttery crumbly crust filled with apples, berries, nuts and amazing sweet sour cream filling. Be prepared to serve seconds.
INGREDIENTS
Dough:
1 cup (150g) all-purpose flour
Pinch of salt
1/3 cup (40g) icing sugar
7 tablespoons (100g) unsalted butter
1/2 cup (60g) cream cheese Philadelphia
Sour Cream Filling:
1 1/2 cups (11 oz or 350g) sour cream
4 1/4 cups (500g) peeled and sliced apples
1 cup (100g) icing sugar
2 eggs
1/4 cup (30g) cornstarch
1 teaspoon pure vanilla extract
1 teaspoon ground cardamom
1/2 cup any berry jam
1/4 cup (30g) almond petals
PREPARATION
1. Preheat the oven to 350°F/180°С. Butter a 9 inch (22-24cm) pie pan and sprinkle it with flour. Set aside.
2. In a medium bowl whisk flour with icing sugar and salt. Incorporate butter using a pastry blender, a fork or a pastry processor, until crumbs are formed. Add cream cheese and stir until incorporated.
3. Into a lightly floured surface roll the dough until it's about 12in (30cm) in diameter.
4. Line the pan with the rolled dough and press the edges.Cut the excess dough. Put in the refrigerator while we prepare the filling.
5. Prepare the filling. In a medium bowl combine icing sugar, sour cream, vanilla, ground cardamom, eggs and cornstarch.
6. Cut peeled apples into thin slices and place in the base of the dough. Spread the sour cream filling evenly on top.
7. Arrange random berry jam on top and sprinkle with almond petals.
8. Bake for about 1 hour (or until brown). Cool down minimum 4 hours or overnight.
