How To make Apple Pie European Sour Cream
CRUST: 2/3 C Butter
1/4 C Pure maple syrup
1/2 C Cream cheese
1 Egg
1 Tb Orange rind
1 T Vanilla
2 1/4 C Unbleached flour
1/2 Ts Baking powder
FILLING: 2 Lb Green apples
TOPPING: 1/2 C Sour cream
1/4 C Pure maple syrup
2 Tb Lemon juice
1/4 Ts Nutmeg
For the crust, blend together butter, maple syrup, cream cheese, egg, orange rind and vanilla. Add flour and baking powder. Roll out crust on a floured surface with a floured rolling pin. This dough is soft. Roll to 1/3-inch thickness. Fit or pat the dough into 7-inch pie plate. Cut apples into 1/8-inch slices and arrange in a circular pattern on dough in pie plate. Refrigerate 1/2 hour. Combine sour cream, maple syrup and lemon juice. Spoon over chilled apples. Sprinkle nutmeg on top. Bake at 350 degrees for 30 minutes.

Today on the old cook book show Glen Cooks an apple pie recipe from 1685. This old recipe is for an apple pie... but not once in the title or the main body of the recipe does it mention or call for apples.
So let's talk about apples - the recipe calls for 'Pippins'; none of the pippins available today are the same as in the 1600s. None of the pippins available today are related to the pippins in the 1600s. In the 1600s the word 'Pippin' meant the fruit of the Malus M. domestica tree - what we would call today an 'Apple'. In the 1600s the word 'Apple' just meant 'Fruit' and was applied to every fruit and many vegetables like tomatoes, potatoes, eggplant, pineapples, etc, etc, etc.
A Made Dish of Butter and Eggs.
Take the yolks of twenty four eggs, and strain them with cinnamon, sugar, and salt; then put melted butter to them, some fine minced pippins, and minced citron, put it on your dish of paste and put slices of citron round about it, bar it with puff paste, and the bottom also, or short paste in the bottom.

This easy apple cake is a delicious dessert that's perfect for any occasion. The cake has a light and fluffy texture and is infused with the sweet and tangy flavors of apples and lemon juice. The cake batter is made with a combination of eggs, sugar, yogurt, milk, sunflower oil, and vanilla extract. This creates a moist and tender crumb that is perfectly complemented by the sweet and slightly tart apple slices.
To make the cake, you'll need 2 apples, which you'll need to peel and slice into thin pieces.In a pan, melt 25 grams of butter and add apple slices, add 15 grams of lemon juice and 20 grams of sugar. Cook the apple slices in the mixture until they soften a little.
Next, prepare a cake batter by whisking 2 eggs with 130g of sugar, adding 60g of yogurt, 60ml of milk, 60ml of sunflower oil, and a dash of vanilla extract to the egg mixture and whisk until well combined. Sift 200g of flour and 8g of baking powder into the mixture and gently fold until the batter is smooth.
Pour the cake batter into a greased 18cm cake pan and arrange the cooked apple slices on top.
Bake the cake in a preheated oven at 180°C for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Once the cake is done, let it cool in the pan for 10-15 minutes before removing it from the pan and placing it on a wire rack to cool completely. If you like, you can grill the cake for an additional 2 minutes until the top is golden brown. This apple cake is a crowd-pleaser and is sure to become a family favorite!
