Anna Makes Sour Cream Donuts | Oh Yum
Sour Cream Doughnuts are a wonderful treat for any occasion, but these little bites are best enjoyed on a cold winter day. Chef Anna Olson takes you from step one to step yum with plenty of tips and tricks along the way!

Ingredients
½ cup (125 mL) sour cream
½ cup (125 mL) buttermilk
½ cup (115 g) sugar
1 large egg
½ tsp (3 g) fine salt
2 cup (300 g) all purpose flour
¾ tsp (4 g) baking soda
dash of ground nutmeg
vegetable oil for frying
icing sugar for dusting
cinnamon sugar for coating
Directions
1. Whisk sour cream, buttermilk, sugar, egg and salt together. Sift together flour, baking soda and nutmeg and add to sour cream mixture, stirring just to blend. Let dough sit while heating oil.
2. Heat 2 inches (5 cm) of oil in a high-sided pot to 350°F (180°C), measured on a fryer or sugar thermometer. With a small ice cream scoop or with a tablespoon, drop spoonfuls of dough carefully into oil. Let cook until doughnuts are a deep brown on one side, about 4 minutes, before turning and cooking to the same colour on the other side (often they turn themselves over when they are cooked on one side!). Remove doughnuts with a slotted spoon and drain on paper towel.
3. Let doughnuts cool 10 minutes, then sift icing sugar on top and serve, or toss in cinnamon sugar while warm.

Medieval German Apple Pie | The World That Was
This week, I recreated a recipe from a medieval German cookbook - the Registrum Coquine - which describes a pie for peasants. While this is from the later medieval period/early Renaissance, it serves as a great insight into how flavourful peasant dishes could be in urban European cuisine in this period!

1 1/2 cups all-purpose flour (186gr)*
1/4 cup granulated sugar (48 gr)
1/4 tsp salt
2 tsp baking powder
1/2 cup (8 Tbsp) unsalted butter, chilled
1 large egg, chilled and beaten with a fork
1/3 cup heavy whipping cream, chilled

on a form 18 - 21 cm

- apple (4-5 large)
- sugar 150 g
- flour 150 g
- vanilla extract 1 teaspoon
- zest of 1 lemon or orange
- sour cream 1-2 tablespoons
Bake in preheated oven (400 Fahrenheit) 35-45 minutes.

Delicious & Quick Fluffy Apple Cake / Easy Recipe
This easy apple cake is a delicious dessert that's perfect for any occasion. The cake has a light and fluffy texture and is infused with the sweet and tangy flavors of apples and lemon juice. The cake batter is made with a combination of eggs, sugar, yogurt, milk, sunflower oil, and vanilla extract. This creates a moist and tender crumb that is perfectly complemented by the sweet and slightly tart apple slices.
To make the cake, you'll need 2 apples, which you'll need to peel and slice into thin pieces.In a pan, melt 25 grams of butter and add apple slices, add 15 grams of lemon juice and 20 grams of sugar. Cook the apple slices in the mixture until they soften a little.
Next, prepare a cake batter by whisking 2 eggs with 130g of sugar, adding 60g of yogurt, 60ml of milk, 60ml of sunflower oil, and a dash of vanilla extract to the egg mixture and whisk until well combined. Sift 200g of flour and 8g of baking powder into the mixture and gently fold until the batter is smooth.
Pour the cake batter into a greased 18cm cake pan and arrange the cooked apple slices on top.
Bake the cake in a preheated oven at 180°C for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Once the cake is done, let it cool in the pan for 10-15 minutes before removing it from the pan and placing it on a wire rack to cool completely. If you like, you can grill the cake for an additional 2 minutes until the top is golden brown. This apple cake is a crowd-pleaser and is sure to become a family favorite!

Baking powder: 8g (1 and 1/2 tsp)
