How To make Chocolate Maple Cake
2 c Cake flour; sifted
1 tb Baking powder
1/4 ts Salt
1/2 ts Baking soda
1/2 c Butter or margarine
1 c Sugar
2 Eggs; separated
3 oz Unsweetened chocolate;
-melted 1 1/4 c Milk
1 ts Vanilla extract
Maple walnut butter -frosting: 1/2 c Butter or margarine
4 c Powdered sugar; sifted
1/4 ts Salt
6 tb Cream
2 ts Maple flavoring
1 c Walnuts; chopped
Recipe by: Mary M McBride's Encyclopedia of Cooking Preheat oven to 375 degrees; lightly grease two 9-inch layer pans. Sift flour once before measuring, then sift 3 times with baking powder, salt and baking soda. Cream butter until soft and smooth; gradually add sugar, creaming until light and fluffy. Add beaten egg yolks, then melted chocolate. Add milk alternately with dry ingredients, beating until smooth after each addition. Continue beating for two minutes. Fold in flavoring and stiffly beaten egg whites. Turn into prepared pans and bake for about 30 minutes. Turn out onto a wire rack to cool. Split layers in half horizontally. To prepare frosting, cream butter until soft; slowly stir in 2 cups sugar and the salt. Add additional sugar alternately with cream, beating thoroughly after each addition until creamy and smooth. Stir in walnuts with the last of the sugar. Beat in maple flavoring. Additional cream may be added to give frosting proper spreading consistency. Spread between layers, then frost top and sides of cake. -----

Ingredients for making choco flan cake:
For the Cake:
Softened butter, to coat pan
1/4 cup Martin Picard Maple Dulce De Leche
(or any dulce de leche or caramel sauce)
10 tablespoons butter, room temperature
1 cup sugar
1 egg, room temperature
1 3/4 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/3 cup cocoa powder
For the Flan:
1 1/4 cups buttermilk
One 12-ounce can evaporated milk
600 ml Martin Picard Maple Condensed Milk
(Or any sweetened condensed milk)
4 ounces cream cheese, room temperature
3 eggs
1 tablespoon vanilla extract
Instructions for making chocolate flan cake:
- First, make sure you butter your bundt pan REALLY WELL
- You’ll see what happens later if you don’t do this
- The next step is to put a layer of dulce de leche or caramel sauce in the bottom
- We used a maple dulce de leche made by chef Martin Picard, you can use any dulce de leche or caramel sauce though
- Once there’s an even layer, set the pan aside and add 10 tbsp of softened butter to a large bowl
- Next add 1 cup of sugar and beat with an electric mixer until light and fluffy
- Add 1 room temperature egg, beat again until combined then set aside.
- In a medium bowl, sift 1 3/4 cups of all-purpose flour
- It’s generally a good habit to get into to always sift your dry ingredients, it helps to remove lumps and creates a much smooth texture for your finished product
- Next sift in your baking soda, baking powder and finally 1/3 of a cup of cocoa powder
- The cocoa powder especially needs to be sifted as you can see
- You might even need to press some of the larger clumps through the sieve
- Whisk this all together and now it’s time to combine the dry with the wet ingredients
- Only add about 1/3 of the flour mixture at first followed by half of 1 1/4 cups of buttermilk
- Use an electric mixer to blend then add another 1/3 of the dry mix followed by the other half of the buttermilk
- Mix again until combined then finally add the last 1/3 of the flour mixture and blend until smooth
- The cake batter is now done so it’s time to work on the flan
- Add 1 cup of evaporated milk followed by 2 300 ml cans of sweetened condensed milk to a blender
- We use chef Martin Picard’s maple condensed milk but of course if you can’t find his brand, any condensed milk will do
- Add 4 ounces of room temperature cream cheese, 3 eggs and 1 tbsp of vanilla extract then cover and blend on high for 30 seconds or until well combined
- Add the chocolate cake batter to the bundt pan on top of the dulce de leche layer and spread it out evenly
- Next pour the flan mixture on top
- Something magical is going to happen in the oven, the cake and flan are going to switch positions in the pan so don’t worry about the structural integrity of the dish at this point
- We want to gently cook this at an even temperature so place the bunt pan in a larger roasting pan then pour about 1 inch of boiling water into the bottom of the larger pan
- Cover with aluminum foil then bake at 350 F for 1 hour

Today we delve into a little culinary history from the maple sugar shacks of Ontario. Breakfast Cake? I guess that's a thing - Even if you don't eat this cake for breakfast, it's a solid maple cake recipe.
Sift together
1 ½ cups sifted pastry flour
½ cup whole wheat flour
4 teaspoons baking powder
1 teaspoon salt
¼ teaspoon cinnamon
1/8 teaspoon nutmeg
Combine
1 egg, beaten
⅔ cup maple syrup
⅔ cup milk
1 ½ teaspoons melted butter
Add to dry ingredients. Turn into a greased 9-inch pan and sprinkle top with cinnamon and maple sugar. Bake 35 minutes at 400º.

Dark Chocolate Maple Whisky Cake Recipe || IN THE KITCHEN WITH DEE
One of the most delicious cakes I've ever made!
RECIPE:
Ingredients:
Cake:
6 eggs (separated, keep both!)
1 cup butter (I used salted)
1 1/2 cup sugar
3/4 cup whiskey
1 big bar of dark chocolate (300g)
1 1/2 cup flour
2 tsp baking powder
1/3 cup cocoa powder
Dark Chocolate Ganache:
2 bars (100g each) of dark chocolate
3/4 cup heavy/whipping cream
Instructions:
1. Separate your eggs, and beat the egg whites until soft peaks form.
2. Melt chocolate over a bowl in boiling/simmering water.
3. In it’s own bowl, sift flour, cocoa powder, baking powder.
4. Beat butter and sugar until creamy.
5. Incorporate egg yolks one at a time into the butter/sugar mixture.
6. Add whiskey and melted chocolate.
7. Fold in flour mixture, then egg whites.
8. Pour batter into two cake pans and bake for 350F for an hour or until toothpick comes clean in the middle.
9. Cool cakes on a cooling rack.
10. Pour cream into sauce pan and bring to a boil.
11. Break up chocolates into small pieces and place into a heat resistant bowl.
12. Pour boiling cream over the chocolates and let stand for 2 minutes (DO NOT STIR!)
13. After two minutes, whisk chocolate and cream until blended. Let ganache stand or put into the refrigerator until thick enough to use as icing.
14. Slice tops off cake tops, slather ganache over top of one cake top. Put second cake top on top and begin to decorate your cake!
