How To make Asparagus and Chicken In Black Bean Sauce
2 Chicken thighs
12 md Asparagus spears
3 tb Peanut or corn oil
MARINADE:
1 tb Dry sherry
1 ts Cornstarch
2 ts Thin soy sauce
1 pn Sugar
SAUCE:
2 ts Fermented black beans
3 Cloves garlic, minced
1/2 ts Brown sugar
2 ts Black soy sauce
3/4 c Chicken stock
Cornstarch paste Marinating: With sharp paring knife, scrape chicken meat from thigh; slice into thin strips across the grain. (Breast meat is not preferred for this dish, as meat is too dry and spongy.) Combine sherry, soy, cornstarch and sugar in bowl; massage liquid into meat with your fingers. Marinate for 15 to 30 minutes. Preparation: Wash asparagus; peel tough white outer skin off ends; slice on diagonal in 2 1/2" sections. Rinse fermented black beans. In bowl, combine and mash black beans and garlic, brown sugar, black soy sauce and chicken stock; stir; reserve for 15 minutes. Stir Frying: Add 2/3 of oil to hot wok; when oil is very hot, add chicken. Stir-fry for about 3 minutes on high heat - or until chicken begins to shrink and firm up. Remove chicken to holding bowl. Reheat wok to high, add remaining oil. When oil is hot, add black bean sauce. Stir-fry for 1 minute. Add asparagus; mix with sauce. Stir sauce with asparagus. When sauce boils, add cooked chicken; toss to combine. Dribble in a little cornstarch paste if needed; cornstarch in chicken marinade might be enough. Toss ingredients until very little liquid remains and is reduced to glaze. Dish is ready when asparagus brightens. If you still have too much liquid, remove ingredients, continue to reduce sauce, then return ingredients to coat them with sauce. Serve in individual portions.

Stir-fry beef with black bean sauce is my favorite food ordered in Chinese restaurants.
Since my favorite restaurant is no longer serving this dish recently, I decided to dig deeper into how to prepare it at home.
I am delighted it is pretty easy to prepare if I use a store-bought black bean sauce. What’s more, it is such a delicious but quick and easy recipe that I can make it within 30 minutes.

Ingredient A
350g beef
2 tsp soy sauce
1/2 tsp salt
1/2 tsp baking soda
1 tsp cornstarch
Ingredients B
2 tsp minced ginger
1 tbsp minced garlic
3 tbsp vegetable oil
1/2 green bell pepper
1/2 red bell pepper
1 medium-sized onion
1 tsp sesame oil
1 tbsp rice wine
1 tsp of cornstarch (plus 1 tbsp of water to make a slurry)
Ingredients C
1.5 tbsp black bean sauce
1 tbsp light soy sauce
1 tbsp oyster sauce
1/4 tsp ground black pepper
3 tbsp water
Method:
Preparation
- Cut the beef across the grain into thin slices.
- Marinate the beef with Ingredient A for 15 minutes.
- Cut the spring onion into short sections, about 1 inch in length.
- Cut the green bell pepper into one-inch pieces.
- Slice one medium size onion into wedges.
- Mix Ingredients C (except the black bean) to become the stir-fry sauce.
Cooking
- Heat the vegetable oil to medium-high heat, then add the marinated beef and spread it out into a single layer.
- Let the beef sear for half a minute, then flip over to sear the other side until slightly brown.
- Continue to stir-fry the beef until about 80% cooked. Then remove the beef from the wok with a strainer, and leave excess oil in the wok.
- Saute the chopped garlic and ginger with the remaining oil in the wok.
- Add the black bean sauce and the stir-fry sauce to the wok, then put all the vegetables into the wok. Turn up the heat to stir-fry the vegetable until crisp-tender. You can add a splash of water if it is too dry.
- Return the beef to the wok.
- Add the cornstarch slurry to thicken the gravy.
- Add the spring onion, a teaspoon of sesame oil, and a tablespoon of Shaoxing wine. Dish out.

300g chicken breast, cut into cubes or diced (or Quorn mince as vegetarian alternative)
1 Tbsp cooking oil
1 shallot, finely chopped
1 small green pepper, diced
1 small red or yellow bell pepper, diced
Marinade
1 Tbsp Lee Kum Kee Oyster Sauce
Sauce Mix
2 Tbsp Lee Kum Kee Black Bean Sauce (or Chilli Garlic Paste)
1 Tsp sugar
2 Tbsp water
Method
1. Marinate the chicken with Oyster Sauce and set aside.
2. Sauté shallots over medium heat for 2 minutes, add chicken to stir fry for 5 minutes.
3. Add in the peppers and sauce mix for a further 3 minutes until the chicken is cooked through.

RECIPE BELOW: Classic Black Bean Sauce is the delicious base for this chicken stir fry with asparagus.
Serves 4-6
Ingredients:
• 2 small or 1 large skinless & boneless chicken breasts
• 1 bunch asparagus, washed, trimmed & cut 2”diagonal
• ½ med yellow onion-sliced
• 2Tbsp Chinese Fermented Black Beans-soaked and rinsed
• 4 garlic cloves, minced
• 1 Tbsp minced ginger
• 2 spring onions-cut small
• 2 Thai red chilies-seeded and sliced *optional
• Seasoning salt mix -Watch video-S1Ep76-
• ½ Tsp Ground white pepper
• 1 Tbsp Oyster sauce
• 2Tbsp Lite soy sauce
• 1 Tsp Shaoxing wine
• 2 Tsp Sesame oil
• 1 Tbsp Cornstarch + 2-3 Tbsp water for slurry
• 1 C water
• Oil for cooking
Black Bean Sauce: combine black beans with the ginger, garlic, chilies; add 1 Tsp seasoning salt, 1 Tbsp lite soy, 1 Tsp sesame oil
Chicken Marinade: 1 Tsp seasoning salt, ½ tsp white pepper, 1 tsp sesame oil, 1 Tbsp lite soy, 1 Tsp wine, 1 Tsp cornstarch
Asparagus: 1 Tbsp water, ½ tsp seasoning salt, 1 Tbsp wine
**Always wash & rinse vegetables before using
