How To make Tofu In Black Bean Sauce
3 tb Peanut or light sesame oil
5 ea Garlic cloves
-- finely chopped 1 tb Ginger, finely grated
3 tb Chinese black beans
3 tb Onions, coarsely chopped
2 tb Soy sauce
2 tb Barley or rice malt
2 c Water
3 tb Kuzu, dissolved in...
1/3 c Water
1 lb Firm tofu, sliced
2 ts Dark sesame oil
In a wok, heat oil until nearly smoking. Add garlic and ginger, and stir-fry rapidly over high heat for 1 minute. Add black beans, and stir for 30 seconds. Add onions, and stir for 2-3 minutes.
Add soy sauce, sweetener, and water. Bring to a boil. Add kuzu. Stir with a wooden spoon until it thickens and becomes clear and shiny. Stir in tofu and dark sesame oil, and simmer 2-3 minutes. Have you ever tried cooking tofu with black bean sauce?
It may sound unusual to anyone who does not cook Asian food often, but it is a classic everyday home dish for the Chinese, especially among the Cantonese.
Black bean sauce is not just raw black beans ground into a sauce. It is a paste or sauce made from fermented black beans. Don't be put off by the word fermentation - it's a process that can develop a lot of flavor. Think of cheese, which is a product of milk fermentation. Fermentation also gives black beans an intense umami flavor that is perfect for cooking Chinese dishes.
Now, let's think of tofu as a blank canvas. It has texture but not much flavor on its own. This makes it the perfect vehicle to absorb any flavor, and of course, the black bean sauce added to it.

Ingredients A
500g firm tofu
3 tbsp vegetable oil
1 medium size onion, sliced
1 tsp chili oil (optional)
3 cloves garlic, chopped
1 tsp grated ginger
2 tbsp fermented black bean sauce
2 stalks of green onions, cut into one-inch sections
Ingredients B
1 tbsp Shaoxing wine
1 tsp sesame oil
1/2 tsp light soy sauce
1 tsp sugar
1/4 tsp ground white pepper
2 tbsp water
Ingredients C
1 tbsp toasted sesame seeds
Method:
Pan-fry the tofu
- Drain the excess water from the tofu and place it on a paper towel to absorb the remaining water.
Cut the tofu into approximately 1/4-inch thick pieces.
- Place the tofu on a plate and wait for ten minutes. Remove any water if there is water releasing further from the tofu.
- Add vegetable oil to a pan. Place the tofu single layer in the pan. Over medium-high heat, pan-fry the tofu until it becomes golden brown.
- Once done, remove the tofu from the pan and set it aside.
Prepare the sauce
- Heat the remaining oil in the pan to sauté the sliced onion.
- Once the onion turns slightly brown and aromatic, add the garlic, black bean paste, and seasonings.
- Add the seasonings (Ingredients B) to the pan.
- Then, return the pan-fried tofu slices to the pan and carefully flip them to coat them with the black bean sauce.
- Transfer to the serving plate. Sprinkle some toasted sesame seeds on top to serve.

Tofu green pepper chilli black bean sauce 豉椒豆腐
If you don’t want to deep fry your tofu before stir fry, there is a way around it. I am going to show you in this video. This is the soft version of tofu (beancurd) green pepper chilli black bean sauce. In this version I will not be deep frying the tofu, instead I will soak it in hot water while cooking the rest of the ingredients and add it in at the end of cooking.
The ingredients will be the same as the deep fry version of tofu (beancurd) in black bean sauce (my last upload). Below is my recipe for you guys to try at home.
