How To make Bay Of Fundy Salmon with Black Bean Sauce
4 Salmon steaks or fillets
Mayonnaise to brush on fish
SAUCE:
1 bn Scallions
2 tb Olive oil with lemon essence
1/4 c Sake
Commercial Black Bean - and Garlic sauce Fresh lemon juice 1. Brush salmon (Bay of Fundy species) with a prepared mayonnaise (this
holds in moisture) 2. Bake, broil or grill salmon until just a thin opalescent strip remains
in centre of fish. 3. Meanwhile, prepare sauce: Saute 1 bunch scallions, thinly sliced, in
olive oil and a squeeze of lemon (President's Choice Olive Oil With Lemon Essence may be used) for 30 seconds. Add Sake and flambe, or simmer for 2 minutes. Add one bottle of President's Choice Memories of Hong Kong Spicy Black Bean and Garlic Sauce (or substitute black bean sauce), and simmer for 2 more minutes. Adjust taste with fresh lemon juice, if desired. 4. Pour sauce over salmon before serving. Accompany with cooked rice or
rice/vegetable mixture.

A lot of people shy away from a heart healthy diet because they feel it will be difficult to follow or limit their ability to dine out. However, Owner and Chef of the Savory Grille in Macungie Shawn Doyle says that maintaining a heart healthy diet doesn't have to be difficult. In fact, it's something he routinely keeps in mind when he prepares his menu.
A lot of the dishes we serve here at the Savory Grille are heart friendly, says Shawn Doyle. I substitute oils for butter and use spices instead of salt. It doesn't sacrifice the flavor at all.
Doyle also says that he emphasizes portion control by balancing the amount of protein he serves with plenty of vegetables and leafy greens. You aren't supposed to sit down and eat a 20 ounce steak. The regular serving size is actually closer to three ounces so I try to keep that in mind, claims Doyle.

You may not be familiar with the Arctic surf clam, but Canada, specifically Bedford, N.S., is home to the world's biggest fishery. The Clearwater processing plant harvests the mollusk miles offshore, where the ocean is deep and clean. The clam is then quickly processed and graded before being shipped around the world. Approximately 98 per cent heads to Asia for the sushi and sashimi markets.
