Stir Fried Beef & Mushrooms in Black Bean Sauce (Chinese Cooking Recipe)
Welcome to Chinese Cooking. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
200g Beef Fillet
100g Button Mushrooms
½ Green Pepper
3 Cloves Garlic
5g Ginger
2 Spring Onions
200ml Blackbean Sauce
1 Egg
½ Green Pepper
1 Tbsp Cornflour
Method:
1. Finely chop the garlic and ginger
2. Roughly chop the spring onions
3. Cut green pepper into bite-size pieces
4. Cut the mushrooms into halves or quarters depending on the size of the mushrooms
5. Cut beef into thin strips and place into a bowl
6. Break the egg onto the beef, add cooking wine, soy sauce and cornflour. Mix well and leave to marinate for 10 minutes
7. Heat 2 Tbsp of oil in a wok over high heat
8. Place beef single layered in the wok, stir-fry for 2minutes or until lightly brown, remove beef but leave the oil
9. Place ginger and garlic into the wok, fry for few seconds
10. Add the mushrooms and pepper, stir fry for a minute
11. Add the black bean sauce, stir and then bring to the boil
12. Add the beef and stir-fry for a minute
13. Add spring onion
14. Transfer to a dish and serve

RECIPE BELOW: This quick and simple stir fry asparagus dish is both healthy and delicious! ENJOY!
Serves 4
Ingredients:
• 1# asparagus, trimmed & cut in half diagonally
• 3 oz (1/2 pkg ) oyster mushrooms, cut in half
• 3.5 oz (1/2 pkg) cloud ears/black fungus, cut in half
• 3-4 cloves garlic, minced
• 1 Thai chili pepper, seeded & minced
• 1 Tbsp Shaoxing wine
• 1 Tsp Fish sauce
• 1 Tsp Sesame oil
• 1 Tbsp Oyster sauce
• 1 Tsp seasoning salt-Watch video-S1Ep76-
• 1/2 tsp Black pepper
• Oil for cooking
**Always wash & rinse vegetables before using
**Always adjust the seasonings to your personal taste

LAY HO MA (how's it going in Cantonese)! Back to the basics today with a classic recipe that's brimming with beautiful colours and textures. Join me in this episode and learn how to cook up a delicious vegetable stir fry recipe to enjoy tonight!
Ingredients:
80g broccolini
40g carrot
80g cremini mushrooms
1/2 red bell pepper
1/2 red onion
4 spears baby corn
90g smoked tofu
1 tbsp soy sauce
1 tsp dark soy sauce
1 tbsp hoisin sauce
1 tbsp sriracha
1 tsp cane sugar
splash of toasted sesame oil
1+1 tsp avocado oil
Directions:
1. Chop the broccolini into bite sized pieces and the carrot into matchsticks. Brush the dirt off of the mushrooms with a paper towel. Then, chop them into quarters
2. Slice the red bell pepper and quarter the red onion. Chop in half the baby corn and the smoked tofu into bite sized cubes
3. Make the sauce by combining the soy sauce, dark soy sauce, hoisin sauce, sriracha, sugar, and toasted sesame oil
4. Heat up a nonstick pan to medium high heat. Add 1 tsp avocado oil followed by the smoked tofu. Sauté for 3-4min, then set aside
5. Add another tsp of avocado oil to the pan. Add the red onions and broccolini. Sauté for a couple of minutes allowing for the veggies to sear and get some colour
6. Add the cremini mushrooms and carrots. Sauté for a couple of minutes. Add the red bell pepper and baby corn. Sauté for another couple of minutes
7. Add the stir fry sauce and add back in the smoked tofu. Sauté for another minute
8. Plate the veggies and serve with freshly steamed rice
