How to Make Pineapple Pork Ribs
✅Ingredients
2 tablespoons canola oil
1 large potato, peeled and cut into chunks
1 onion, peeled and chopped
2 cloves garlic, peeled and minced
1 thumb-size ginger, peeled and chopped
2 pounds baby back ribs, cut into serving portions
1 cup pineapple juice
1/4 cup soy sauce
1 cup pineapple tidbits
2 cups water
2 tablespoons raisins
salt and pepper to taste
✅Instructions
In a pot over medium heat, heat oil. Add potatoes and cook, stirring occasionally, until lightly browned. Remove from pot and drain on paper towels.
Add onions, garlic, and ginger and cook until softened.
Add baby back ribs and cook, turning occasionally, until lightly browned.
Add pineapple juice, soy sauce, pineapple tidbits, and water. Bring to a boil, skimming scum that floats on top.
Lower heat, cover, and cook for about 1 11/2 to 2 hours or until meat is fork-tender, adding more water in 1/2 cup increments as needed.
When the meat is tender, add potatoes and raisins. continue to cook until potatoes are tender.
Season with salt and pepper to taste. Serve hot.

California Ham Spice 1g/kg
Garlic Powder 1g/kg
Cure 5% 3g/kg
Sodium Erythorbate 1.5g/kg
Crushed Pineapple 199.98g/kg (Exact measurement) ; )
This one was about 5-6hours in the dehydrator at 60-65c
These times are approximate and may change on your set up.
Make sure they are spaced out and all evenly dried.

Red Curry With Pork And Pineapple | Thai Cooking Class
Red curry with pork and pineapple is one of the most popular dishes I teach here in Thailand at my Thai cooking class in Khao Lak. I get asked to make this a lot.
It is a classic Thai curry, spicy and creamy with the pineapple adding an extra sweet taste. With so much flavour you might think this dish is difficult to make, but if you follow my instructions you will see it's much easier than you think.
You will need the following ingredients:
100g pork tenderloin thinly sliced.
25g red curry paste.
250ml coconut milk.
2 kafir lime leaves.
75g pineapple peeled and sliced.
1 sweet chilli.
1 teaspoon fish sauce.
1 teaspoon pork stock.
1 tablespoon sugar.
A good handful of sweet Thai basil.
