Sparkling Cider Pound Cake

A wonderfully flavored pound cake that is sure to impress.
1/2 cup softened butter
1/4 cup shortening
1 1/2 cups sugar
2 eggs
1/2 tsp. butter extract
1/4 tsp. salt
1/4 tsp. baking powder
1 1/2 cups flour
1/2 cup Sparkling Cider
Glaze:
1 1/2 cups powdered sugar
1/4 cup Sparkling Cider (Use much less if you want a thicker glaze)
Directions:
Cream butter, shortening and sugar together in a large bowl. Beat in eggs one at a time along with the butter extract. In a small bowl, combine salt, baking powder, and flour and stir to evenly combine. Add alternately with 1/2 cup sparkling cider to the wet ingredients and beat until well incorporated.
Pour into a greased and floured 9 x 5 inch loaf pan. (I used Pam with flour)-- cover well, it WILL stick.
Bake at 350 degrees for about 50 minutes or until the top is golden brown and until a toothpick can be inserted and come out clean. Let cool in the pan for 5-10 minutes then transfer to a cooling rack.
In a medium bowl, whisk sparkling cider and powdered sugar until smooth consistency is reached. Poor over cooled pound cake.

Apple cider poundcake
Ingredients
1 cup butter, or margarine, softened
1/2 cup shortening
3 cups sugar
6 eggs. (I used large)
3 cups all purpose, flour
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
One cup apple cider
1 teaspoon vanilla extract
Combine butter and shortening, mix well: add eggs ( I put my teaspoon of vanilla extract in with my eggs), one at a time. Beating well after each addition.
Combine dry ingredients : add to cream mixture, alternately with apple cider. Beginning and ending with flour mixture. Mix well after each addition.
Pour batter into a well greased 10 inch tube pan . An angel food pan would work great and basically any two pan or Bundt pan cake can be put in a 9 x 13 x 2 baking dish.
Bake at 325°F for one hour and 45 minutes or one hour and 50 minutes until cake test is done . By inserting a toothpick into the centre of the cake and see you if it comes out clean. Cool in pan for at least 15 minutes before removing from cake pan and let cool completely on a wire rack or a baking rack

Fresh Apple Spice Cake

Ingredients
1 cup chopped pecans
1/2 cup dark rum, such as Mount Gay
1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated
Directions
Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.

Delicious & Quick Fluffy Apple Cake / Easy Recipe
This easy apple cake is a delicious dessert that's perfect for any occasion. The cake has a light and fluffy texture and is infused with the sweet and tangy flavors of apples and lemon juice. The cake batter is made with a combination of eggs, sugar, yogurt, milk, sunflower oil, and vanilla extract. This creates a moist and tender crumb that is perfectly complemented by the sweet and slightly tart apple slices.
To make the cake, you'll need 2 apples, which you'll need to peel and slice into thin pieces.In a pan, melt 25 grams of butter and add apple slices, add 15 grams of lemon juice and 20 grams of sugar. Cook the apple slices in the mixture until they soften a little.
Next, prepare a cake batter by whisking 2 eggs with 130g of sugar, adding 60g of yogurt, 60ml of milk, 60ml of sunflower oil, and a dash of vanilla extract to the egg mixture and whisk until well combined. Sift 200g of flour and 8g of baking powder into the mixture and gently fold until the batter is smooth.
Pour the cake batter into a greased 18cm cake pan and arrange the cooked apple slices on top.
Bake the cake in a preheated oven at 180°C for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Once the cake is done, let it cool in the pan for 10-15 minutes before removing it from the pan and placing it on a wire rack to cool completely. If you like, you can grill the cake for an additional 2 minutes until the top is golden brown. This apple cake is a crowd-pleaser and is sure to become a family favorite!
