Apple Bundt Cake ~ Tastes Like an Apple Fritter!
This Apple Bundt Cake is perfect for Fall and tastes like an Apple Fritter! It is a soft, moist cake, loaded with apples, brown sugar and Fall spices! It is also pretty easy to make!

Ingredients for apple filling:
3 granny smith apples, cored, peeled and chopped
1/4 cup sugar
1/2 tsp cinnamon
1/8 tsp clove
1/8 tsp nutmeg
2 tsp cornstarch
2 Tbsp water
Mix all ingredients together in a saucepan and cook on medium heat until apples start to soften. Set aside
Ingredients for brown sugar mixture:
1/2 cup brown sugar
1/2 tsp cinnamon
a sprinkle of clove and nutmeg
Mix all together and set aside.
Dry cake ingredients:
2 1/4 cup flour
tsp baking soda
tsp baking powder
tsp cinnamon
1/2 tsp salt
Mix all together and set aside.
Wet cake ingredients:
3/4 cup sugar
1/3 cup softened butter
1/2 cup applesauce
1 cup greek yogurt or sour cream
2 eggs
1 tsp vanilla
Cream together sugar and butter. Add remaining ingredients and mix well. Add in dry cake ingredients and mix just till combined.
To assemble the cake:
Sprinkle half of the brown sugar mixture on the bottom of a well sprayed Bundt pan. Layer half of the cake batter over this. Pour apple mixture over cake batter then sprinkle with remaining brown sugar mixture. Top with remaining cake batter. Bake at 350 for 35-40 minutes. When done, let cool for around 5 minutes before removing cake from the pan. Let cool completely before adding the glaze.
Glaze ingredients:
100 grams of powdered sugar
2 Tbsp water
Mix together well and drizzle over cake

Caramel Apple Cake

Ingredients
Cake:
Nonstick cooking spray or unsalted butter, for greasing the pan
3 cups all-purpose flour, plus more for the pan
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
3 medium apples (I used a mix of green and Pink Lady apples)
1 1/2 cups vegetable or canola oil
2 cups granulated sugar
1/2 cup dark brown sugar
2 teaspoons vanilla extract
3 large eggs
Caramel Sauce:
One 11-ounce package caramels, preferably Kraft Caramels
1/4 cup whole milk
Directions
For the cake: Preheat the oven to 325 degrees F. Generously grease and flour a 9- or 10-inch Bundt pan.
Mix together the flour, cinnamon, baking soda, nutmeg and salt in a medium bowl. Set aside. Peel, core and dice 3 cups apples. Set aside.
Blend the oil, sugars and vanilla in a bowl with a handheld electric mixer or in a stand mixer until well mixed. Add the eggs one at a time, mixing well after each addition. Stir in the dry ingredients until just incorporated. The batter will be very thick. Fold in the apple pieces. Spoon the batter evenly into the prepared pan.
Bake the cake until a toothpick inserted in the center comes out with only a few moist crumbs, about 1 hour 15 minutes. Let cool for 20 to 30 minutes, then remove the cake from the pan to a cooling rack.
For the caramel sauce: Meanwhile, heat the caramels and milk in a saucepan on medium-high heat, stirring constantly, until the caramels are completely melted and the sauce is smooth, about 2 minutes. Let cool for 1 to 2 minutes, then drizzle over the cake just before serving.
