Potato and Beetroot Hash | Texas Red Flannel Hash Recipe
Ingredients:
Beets (1 Bunch)
Olive oil (2 Tbsp)
Waxy golden potatoes (2lbs)
Kosher salt (2 Tbsp)
Chilies (2)
Black pepper
Worcester Sauce (2 Tbsp)
Fresh cilantro 1 bunch (1 Oz)
Step-by-step
1. Preheat your oven to 450°F.
2. Remove the beet greens. You can reserve the greens for another dish another time.
3. Rub the beets with 1 Tbsp of olive and roast in the oven until tender. About 45-50 minutes.
4. Peel the beets. you can do this with a peeler or by gently rub off the skin under running water. Dice the beets into 1/2 inch cubes.
5. Place potatoes in a saucepan and cover with cold water. Add 2 Tbsp of salt. Bring to a boil and cook until tender. Peel and dice.
6. In a 12-inch cast-iron skillet add olive oil, split chilies and remove the seeds, then cut them into thin strips and add them into the pan with beets and potatoes. Season with salt and pepper.
7. Toss over heat until heated through.
8. Add Worcester Sauce and cilantro and let it set on low heat until your hash is crispy.
9. Serve with fried egg.

Chorizo Hash, Rhode Island Johnny Cakes, Southeastern New England Breakfast. Froached Eggs
Southeastern New England features some of the best North American Cuisine. With a strong Portugese influence one may consider this area to be foodie heaven. In this episode I show you how to prepare Chorizo Hash, Froached Eggs and Rhode Island Johnny Cakes.
Ingredients
Hash
1 lb Ground Chorizo
2 Medium Potatoes Diced
1/2 Onion Chopped
3 tbsp Ketchup
3 tbsp Siracha
Johnny Cakes
1 cup cornflour
1tsp salt
2-3 tbsp sugar (optional)
Enough boiling water to make thick like pancake batter consistency
Corned Beef + Beets = Yankee Red Flannel Hash
This recipe comes from the 1968 Better Homes & Gardens Casserole cookbook. We both like hash but were very leery of adding beets to the mix. Find out if this was a winner or disaster.
