1 lb Ground beef 1 Chopped onion 8 oz Can of tomato sauce 16 oz Package of hash browns 3 Tomatoes 3 tb Chili powder 1 tb Worcestershire sauce 1 tb Brown sugar 1 1/2 c Shredded cheese Brown ground beef and onion until onion is tender. Stir in tomato sauce, chili powder, worcestershire sauce and brown sugar, simmer until thick. Meanwhile, prepare hash browns. Place in pie pan or 9x9x2 pan. Top with meat mixture, then slice tomatoes and top with cheese. Broil long enough to melt cheese.

Mexican chorizo breakfast hash is an incredibly satisfying recipe that is versatile enough for you to customize to your tastes! One of the best things about cooking hash is that there are no limitations in regards to the seasonings and ingredients. Today we use chorizo, but really any type of meat works and there are even vegetarian recipes as well. Also, just about any vegetables can be used. This is a great dish to use up whatever you have on hand in your fridge, including left overs. Some of the most common vegetables Eric uses are onion, bell pepper, cherry tomatoes, mushrooms, and spinach. However, feel free to add ANYTHING you like when you cook your own Mexican chorizo breakfast hash! One of the most important steps is the cut the potatoes very small. This is the only way to get a good, crispy result in the pan while still having a tender and fully cooked interior of the potato.
