Potato and Beetroot Hash | Texas Red Flannel Hash Recipe

Potato and Beetroot Hash | Texas Red Flannel Hash Recipe
Ingredients:
Beets (1 Bunch)
Olive oil (2 Tbsp)
Waxy golden potatoes (2lbs)
Kosher salt (2 Tbsp)
Chilies (2)
Black pepper
Worcester Sauce (2 Tbsp)
Fresh cilantro 1 bunch (1 Oz)
Step-by-step
1. Preheat your oven to 450°F.
2. Remove the beet greens. You can reserve the greens for another dish another time.
3. Rub the beets with 1 Tbsp of olive and roast in the oven until tender. About 45-50 minutes.
4. Peel the beets. you can do this with a peeler or by gently rub off the skin under running water. Dice the beets into 1/2 inch cubes.
5. Place potatoes in a saucepan and cover with cold water. Add 2 Tbsp of salt. Bring to a boil and cook until tender. Peel and dice.
6. In a 12-inch cast-iron skillet add olive oil, split chilies and remove the seeds, then cut them into thin strips and add them into the pan with beets and potatoes. Season with salt and pepper.
7. Toss over heat until heated through.
8. Add Worcester Sauce and cilantro and let it set on low heat until your hash is crispy.
9. Serve with fried egg.

Brisket for breakfast? Say lesssssss. At my house, sometimes we cook barbecue, sometimes we have a carne asada, sometimes we are cooking Tex-Mex or Mexican...and sometimes we are cooking breakfast! Today we are gonna make some BRSIKET HASH!
All you need for this recipe is:
3/4 lb of Chopped Leftover Brisket
1/2 Green Bellpepper
1/2 Red Bellpepper
1/2 a White Onion
1 Chopped Jalapeño
and a couple of fried eggs to top it off. Now let's get fired up, and cook some BRISKET HASH! VAMONOS!
Tex Mex Potatoes
TEX-MEX POTATOES

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Servings: 6
6 large red potatoes
2 15 ounce cans pinto beans, drained and rinsed (2 cups)
1 cup fresh salsa (see recipe and/or video)
1 4 ounce can diced green chilies
1 small onion, chopped
1-2 cloves garlic, crushed
¼ cup chopped fresh cilantro
½ teaspoon chili powder
½ teaspoon ground cumin
1 tomato, chopped
¼ cup corn kernels
2 scallions or green onions, chopped
Preheat oven to 375 degrees.
Scrub the potatoes and cut lengthwise into wedges. Place on a baking sheet and bake until lightly browned, about 40 minutes
Meanwhile, combine the beans, salsa, chilies, onion, garlic, 2 tablespoons of the cilantro, the chili powder and cumin in a saucepan. Cook over low heat about 15 minutes.
Combine the tomato, corn kernels and the remaining cilantro. Set aside.
To assemble: Place the baked potato wedges on a serving platter. Spoon the warm bean mixture over the potatoes and top with the fresh tomato mixture. Garnish with several tablespoons of Taco-tofu topping, if desired.
HINTS: Frozen corn kernels may be used in this recipe. Thaw under cold running water and drain well before using. To make a delicious Taco-tofu topping, process 1 package of lite silken tofu in a food processor until very smooth. Transfer to a bowl and combine with one package of taco seasoning mix. (Bearitos makes a wonderful taco seasoning mix.) Chill for several hours for the best flavor. This also makes an excellent dip for cooked, chilled potato chunks or raw vegetables.
