Easy Tex-Mex Hash 1 lb. lean ground beef 1 Tbsp. oil 3 cups frozen potatoes O’Brien with onions and peppers (from 24-oz. pkg.) 1 cup chunky-style salsa 2 tsp. chili powder 1 cup shredded Colby-Monterey Jack cheese blend (or cheese of your preference) 1. Brown ground beef in large nonstick skillet until thoroughly cooked, stirring frequently. Remove ground beef from skillet; cover to keep warm. Discard drippings. 2. In same skillet, heat oil over medium heat until hot. Add potatoes; cook and stir 8 to 10 minutes or until browned. 3. Stir in salsa, chili powder and cooked ground beef. Cook 5 to 8 minutes or until thoroughly heated, stirring occasionally. 4. Sprinkle with cheese. Cover; cook 2 to 4 minutes or until cheese is melted. Enjoy!

Tex Mex Hash Browns Recipe
This Tex Mex seasoned version of hash browns is loaded with all the flavor you come to expect in a typical Tex Mex meal, with chili powder, cumin, and coriander as a few of the spices included in the dish. Try these as a side dish to your next Mexican meal, or as one component of a big Tex Mex bowl with salad greens, black beans, avocado, cilantro & lime plus extra salsa on top!
Tex Mex Hash Browns (6 servings)
Ingredients: • ½ c. chopped onion • 1 bell pepper, chopped (any color, or combination of colors) • 1 jalapeno pepper, seeded and minced (optional) • 1 t. chili powder • 1 t. ground cumin • 1 t. garlic powder • 1 t. onion powder • 1 t. Mexican oregano • ½ t. ground coriander • 1/8 t. cayenne pepper (optional) • 1 10 oz. can ro-tel, drained • 6 c. frozen hash browns • Fresh cilantro & lime for serving (optional)
Directions: 1. Dry sauté chopped onions and peppers in a medium non-stick skillet over medium heat for 2-3 minutes to soften. Add a splash of water as veggies begin to brown to deglaze the pan. Stir occasionally to keep from sticking. 2. Turn heat to medium low and add seasonings. Stir until veggies are coated with seasonings. 3. Add hash browns to pan, mixing in with the vegetables. 4. Add the drained ro-tel, spreading evenly over the top. 5. Do not disturb for 4-5 minutes to let the potatoes brown. 6. After 4-5 minutes, use a spatula to divide the hash browns into 4 sections, and flip each section with the spatula to brown on the other side for 4-5 minutes. 7. Serve as a side dish, or as part of a Mexican bowl—salad greens, tortilla chips, avocado, cilantro & slice of lime topping with more salsa on top.
