How To make Plum Or Apricot Tea Cake
1 egg large
white only
6 tablespoons fresh orange juice
6 tablespoons skim milk
1 tablespoon grated orange zest
1 1/2 cups unbleached flour :
sifted
2 teaspoons baking powder
1 tablespoon margarine softened
2 tablespoons fructose*
2 large plums :
or apricots, diced
butter-flavored cooking spray
*Substitute 5 packets saccharin or 10 packets aspartame (if you're using aspart ame, bake in two loaf pans that are 5 inches (13 cm) in length for 25 to 30 min utes) or 5 packets acesulfame-K for the fructose. It will not change the excha nges.
Preheat oven to 350F (180C). In a large bowl, combine egg white, orange juice, milk, and orange zest. Sift together flour and baking powder. Gradually add to egg mixture, mixing well. Stir in margarine, fructose, and apricots or plum s. Spread batter into an 8 1/2- by 4 1/2- inch (22 by 11 cm) loaf pan lightly sprayed with cooking spray. Bake for 55 to 65 minutes or until a toothpick ins erted in the center comes out clean. Cool in pan for 10 minutes. Transfer cak e to a wire rack to finish cooling. Wrap coo led cake in plastic wrap or alumi num foil and refrigerate until ready to serve. Cut into 1/3-inch (.85 cm) slic es. (Makes about 10 servings)

Delicious & Quick Fluffy Apple Cake / Easy Recipe
This easy apple cake is a delicious dessert that's perfect for any occasion. The cake has a light and fluffy texture and is infused with the sweet and tangy flavors of apples and lemon juice. The cake batter is made with a combination of eggs, sugar, yogurt, milk, sunflower oil, and vanilla extract. This creates a moist and tender crumb that is perfectly complemented by the sweet and slightly tart apple slices.
To make the cake, you'll need 2 apples, which you'll need to peel and slice into thin pieces.In a pan, melt 25 grams of butter and add apple slices, add 15 grams of lemon juice and 20 grams of sugar. Cook the apple slices in the mixture until they soften a little.
Next, prepare a cake batter by whisking 2 eggs with 130g of sugar, adding 60g of yogurt, 60ml of milk, 60ml of sunflower oil, and a dash of vanilla extract to the egg mixture and whisk until well combined. Sift 200g of flour and 8g of baking powder into the mixture and gently fold until the batter is smooth.
Pour the cake batter into a greased 18cm cake pan and arrange the cooked apple slices on top.
Bake the cake in a preheated oven at 180°C for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Once the cake is done, let it cool in the pan for 10-15 minutes before removing it from the pan and placing it on a wire rack to cool completely. If you like, you can grill the cake for an additional 2 minutes until the top is golden brown. This apple cake is a crowd-pleaser and is sure to become a family favorite!

Feeding your fruit cake in the weeks leading up to Christmas helps to build and intensify the flavour of the cake, and will ensure it's beautifully moist.
Oven Temp:
Bake in the oven at 150C/300F (fan) for 45 minutes, then 140C/275F (fan) for a further 60-75 minutes - until an inserted skewer comes out clean.
Alcohol-free Christmas Cake:
For a non-alcoholic version, you can replace the alcohol with cold tea, fresh orange or apple juice.
You can then feed the cake with either:
1. Cold tea
2. Fresh orange or apple juice
3. Ginger cordial mixed with water (2 tsp mixed with 2 tbsp water)
4. Rum flavouring mixed with water (⅛ tsp mixed with 2 tbsp water).
If you do this, don’t make the cake any earlier than November, as juice (as opposed to alcohol) could start tasting funny after more than a couple of months.

INGREDIENTS
120 grams all purpose flour

80 grams jaggery powder
60 ml oil (sunflower, groundnut or any flavourless cooking oil)

½ tsp vanilla extract
4 tbsp or 60 ml whole milk
Note: This results in a crusty top that I like in tea cakes. If you are not a fan, you can add an additional 1-2 tablespoons of milk (and not more).

1 cup mixed glazed fruits, chopped
½ cup dried apricots, chopped
½ cup dried cranberries
½ cup dark raisins
½ cup candied orange peel
1 cup walnuts, coarsely chopped
½ cup golden raisins
1 cup pecans
1 cup pitted dates
½ cup green candied cherries
½ cup red candied cherries
¾ cup rhum
1 ½ cup all purpose flour
1 tsp cinnamon
½ tsp allspice
½ tsp nutmeg
½ tsp baking soda
½ tsp salt
½ cup (113g) softened butter, unsalted
1 cup packed brown sugar
3 eggs, medium
⅓ cup molasses
2 tablespoons rhum
*Divide evenly into three 6x3x2.5 loaf pans greased and lined
*Bake in a preheated oven at 165C for 1 hr 30 mins or until toothpick inserted at the center comes out clean (you can opt to bake them using baine marie method for even cooking and prevent the cake from drying out or just bake them longer at lower temperature)
*Cool completely and brush all over with rhum or brandy
*Wrap them individually in aluminum foil and refrigerate. Avoid touching with bare hands to prevent spoilage
*Brush them again with rhum after a week then repeat brushing for four weeks
*To make a chocolate fruit cake, replace 1/2 cup of flour with alkalized unsweetened cocoa powder
