How To make Plum Filled Coffee Cake ~
COFFEE CAKE:
3 Fresh Purple Plums
1 c Sugar
1 tb Cornstarch
1/2 c Butter, softened
2 Eggs
1/3 c Milk
2 c Flour
2 ts Baking Powder
1/2 ts Salt
1/4 ts Cinnamon
TOPPING:
3 tb Sugar
1/4 ts Cinnamon
Preheat oven to 350 degrees. Chop enough plums to get 1 1/2 cups. Combine chopped plums with 1/4 cup sugar and the cornstarch. Cream butter with remaining 3/4 cup sugar. Beat in eggs, milk, flour, baking powder, salt and cinnamon until well combined. Pour half the batter into greased and floured 8-inch springform pan. Spoon on plum mixture. Spread remaining batter over plums to cover. Combine 2 tablespoons sugar and 1/4 teaspoon cinnamon and sprinkle on the cake. Bake 40 minutes and then cover top loosely with foil. Continue baking 20 minutes until toothpick inserted into center comes out clean. Cool partially. Remove pan sides. Place on plate and cut into wedges to serve. Best served warm or at room temperature. -----

Plum Crumble Cake Recipe
This plum crumble cake is the perfect dessert for family dinners and holidays. It's pretty easy to make, balanced in flavors, it’s not to sweet, and the most important thing, it goes wonderfully with a cup of tea or coffee.

Ingredients:
For the filling:
500 Plums
Lemon zest
3 tablespoons (37g) Brown/white Sugar
30g Cornstarch
For the crumble:
1¼ (125g) Rolled oats
1 cup (125g) Plain flour or whole wheat flour
1/2 cup (115g) Butter, softened
1/4 cup (50g) Brown/white sugar
1 teaspoon Baking powder
Pinch Salt
Directions:
1. Preheat oven to 180C (350F). Line the bottom and the sides of a 8-inch (20cm) round cake pan with parchment paper.
2. Prepare the filling: cut the plums in half, remove the pit, then cut each half into 3-4 pieces. Transfer the plums into a large bowl and add sugar, lemon zest and cornstarch. Mix well and set aside.
3. Make the crumble: in a large bowl, mix oats, flour, salt, sugar and baking powder. Add softened butter and rub with your fingertips until the mixture resembles crumbs.
4. Assemble the cake: spread half of the crumble on the bottom of the pan. Using a spoon or the bottom of a glass, press evenly the mixture. Them spread the filling on top of the crust. And sprinkle the remaining half of the crumble on top.
5. Bake for 30-35 minutes.
6. Release from the pan and serve with vanilla ice cream.
