How To make Streusel Plum Cake
2 tb Margarine
6 tb Granulated sugar
1 Egg, separated
3/4 c Flour
1/2 ts Baking powder
1/4 c 2% milk
1 c Halved plums or other fruit
StrEUSEL TOPPING 1/4 c Packed brown sugar
1/2 tb Soft margarine
1/2 ts Cinnamon
GLAZE (optional) 2 tb Icing sugar
1/2 ts 2% milk
1/8 ts Vanilla
Grease 8" square cake pan, 9" pie plate or springform pan. Beat egg white in a small bowl and set aside. In large bowl, cream together margarine, sugar and egg yolk until fluffy. Combine flour and baking powder, beat into egg mixture alternately with milk. Fold beaten egg white into batter. Turn into prepared pan. Halve plums (or slice peach, apple, pear, nectarine) and arrange over top. Streusel topping: in a small bowl, combine brown sugar, margarine and cinnamon. Mix well and sprinkle over fruit. Bake at 350 F for about 35 minutes or until top is golden and toothpick inserted into cake comes out clean. Time depends on thickness of batter. Glaze: Combine icing sugar, milk and vanilla. Mix well. Drizzle over cake. My notes: original recipe halved makes 5 servings, but it tasted so good warm that we only cut 4 servings. Warmed up in microwave for the second meal. Use extra fruit (fresh or canned) to make 6 servings. Would be nice served at a brunch - moist but not too sweet. German Plum Cake With Streusel
This traditional German Plum Cake with Streusel (Crumbs) is so easy to make from scratch. You can enjoy it just for yourself or you can make it for a large gathering. Just double or triple the ingredients and whip it together!
It is a delicious coffee cake which is made with fresh or frozen plums, simple batter and streusel. Instead of plums you can also use cherries or apples.

Cast Iron Plum Cake with Cinnamon Streusel
Look no further because I got the easiest and most delicious coffee cake! You most likely have all these ingredients on hand already. While I used Italian plums, halved cherries, berries, peaches, apricots, sliced or diced pears and apples or any other fruit can be used instead. In fact, rhubarb season is just around the corner, and it works wonderfully in this recipe. Try it! This weekend! I dare you!
RECIPE
Ingredients:
For the cake:
- 1 and 2/3 cups/ 200 g AP flour
- 2/3 cup/ 140 g organic raw cane sugar (not sugar in the raw)
- 2 tsp baking powder
- ¼ tsp salt
- 7 tbsp/ 100 g soft butter
- 2 medium eggs
- 1/3 cup/ 80 ml milk
- 1 tsp vanilla extract
- 2 cups fresh or frozen plums (you can use any other fruit that you like)
For the cinnamon streusel:
- 2/3 cup/ 80 g AP flour
- 2/3 cup/ 140 g organic raw cane sugar
- ¼ tsp baking powder
- 1/3 cup/ 75 g butter
- 1 pinch salt
- 1 tsp cinnamon
Directions:
1. Preheat oven to 350 F.
2. Grease a 10-inch cast iron skillet very well with butter.
3. To a large bowl add flour, sugar, baking powder, and salt. Whisk with a fork to combine.
4. Add chunks of the soft butter. Use a pastry cutter or fork to mix butter into the dry ingredients until the mixture resembles wet sand.
5. Whisk eggs in a small bowl and add to the “wet sand” mixture.
6. Add vanilla extract and milk and mix everything until homogenous. I use a dough hook because it prevents me from overmixing the cake batter.
7. Add the thick cake batter to the prepared cast iron pan.
8. Arrange plums skin side up so all the batter is covered.
9. Prepare the streusel by mixing dry ingredients with the butter by hand.
10. Add over the plums in an even layer. Sprinkle the cinnamon on top.
11. Bake in the preheated oven for35-40 minutes or until the streusel is golden brown.
12. Remove from oven and allow to cool for 15-20 minutes.
13. Enjoy by itself or topped with ice cream.

Hi lovelies, I know, I know, it was a plum cake last time and it is another plum cake today, but you know what? It had to be done! This cake is so amazing I just couldn´t wait to share it with you. It is super suuuuper soft and has so many juicy plums in it, not forgetting that crunchy crumble topping.
