The Buttery Soft Sponge of a plum cake has a beautiful caramel tint from the homemade caramel syrup and dark muscovado cane sugar with a slight hint of warm notes of Cinnamon and other whole spices to keep you warm during cold Winter days.

1/4 Cup Orange Juice( I used packaged orange juice)
1/2 Cup Dark Rum (I used Old Monk Rum)

1/4 Tsp salt
Spices
1/2 Tsp cinnamon powder, 1/4th TSP each of dry ginger, cardamom, nutmeg, clove powder
2/3 Cup | 150gms Unsalted Butter
3/4 Cup packed | 150gm Dark Muscovado/Brown Sugar
3 Eggs
1 1/2 Tsp Vanilla Essence
Prepared Caramel Syrup
1 1/2 Cup Soaked Dry Fruits
1 Tsp Orange zest(fresh orange skin) - Optional
1 Tbsp Mixed Berry jam
11/2 Tbsp Honey
1/2 Cup chopped Nuts( I used Cashews, Almonds, Pistas)
Above Recipe Makes One 8 Inch Cake of weight around 1 Kg.

Tip: Cover with an Aluminum foil after 45 Mins of Baking to prevent burning at the top surface.

SOAKING FRUITS
in a large bowl add
100 g raisins
100g prunes
100 g blue berries
100 g crane berry
100 g black raisins
100 g apricot
50 g dried pineapple
50 g dates
1 tbsp orange zest
1/2 tsp lemon zest
1 tsp ginger powder
1 tbsp all spice powder (mix of nutmeg cloves and cinnamon)
1 cup orange juice
180 ml rum
mix it well,Cover with a cling film and close tight.
Let it soak overnight for alcohol,you can even soak for one week,I soak these mix fruits 2 days ago
After 2 days
Strain liquid completely
1 cup almonds cut into slices.
Add slice almonds into it.
Mix it well and set it aside.
To make the cake
In a large bowl or plate add 2 and a 1/2 cup all purpose flour
1 tsp baking powder ,Give it a good mix.
Add dry fruits into it ,give everything a good stir.This process helps to prevent the fruit from sinking to the bottom of the cake.Mix the flour and fruit thoroughly and stir through to break up any longer clumps of fruit.Mix until well combined and set it aside
Making the caramel
In a large vessel add
1 cup sugar
Turn the heat on and let this sugar melt down slowly you don’t want the heat very high cook on low heat.No need to stir just swirl the pan around.Once it’s started bubbling add 1/2 cup water.Boil for 10 seconds turn off the heat.Let it cool down completely .
For the batter
in a bowl add
200 g soft unsalted butter at room temperature
Beat until light and pale in colour .Into it add 200 g brown sugar
Mix until everything is nice combined,all of the sugar has dissolved and you are left with a nice light and fluffy mix,Now add 4 eggs at room temperature.Add eggs one at a time whisking in between each addition.Add 1 tsp vanilla essence.A pinch of salt.Mix it well
Into the fruit and flour mix add butter mixture
Into it add 120 ML of caramel that we have made earlier, Gently folds all the ingredients together.
Greased cake tin with melted butter,Brush butter paper with butter and place that into the cake tin
Poor mixture into the prepared cake pan.Garnish with some dry fruits
Into the preheated oven bake it on 160° for 90 minutes or until skewers comes out clean
Allow it to cool down slightly
Brush cake with rum
You can store this cake in a cool dark place for months

This season is all about homemade happiness. As soon as December starts, I start getting excited to begin the festive baking. Everyone at home looks forward to this time of the year because they know I’ll be whipping up something special almost every day.
The cake is loaded with lot of dry fruits and nuts that was soaked for 2 moths. Full of flavor, moist and perfect to enjoy this season.
Ingredients to Soak: (dry Fruits & Nuts)
Raisin (black & golden)
Blueberry
Black currants
Dates
Apricot
Plums
Almond
Cashew
Pista
Tutti fruttis
250 ml Rum
Ingredients For Cake Batter:
1 1/2 cup all-purpose flour
150 ml melted butter, at room temperature
1 cup powdered brown sugar
2 large eggs at room temperature
1/2 cup orange Juice
1 tbsp orange zest
1 tbsp lemon juice
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp nutmeg powder
1/2 tsp cinnamon powder
4 tbsp soaked dry fruits
3 tbsp rum

Ingredients:
1 cup mixed glazed fruits, chopped
½ cup dried apricots, chopped
½ cup dried cranberries
½ cup dark raisins
½ cup candied orange peel
1 cup walnuts, coarsely chopped
½ cup golden raisins
1 cup pecans
1 cup pitted dates
½ cup green candied cherries
½ cup red candied cherries
¾ cup rhum
1 ½ cup all purpose flour
1 tsp cinnamon
½ tsp allspice
½ tsp nutmeg
½ tsp baking soda
½ tsp salt
½ cup (113g) softened butter, unsalted
1 cup packed brown sugar
3 eggs, medium
⅓ cup molasses
2 tablespoons rhum
*Divide evenly into three 6x3x2.5 loaf pans greased and lined
*Bake in a preheated oven at 165C for 1 hr 30 mins or until toothpick inserted at the center comes out clean (you can opt to bake them using baine marie method for even cooking and prevent the cake from drying out or just bake them longer at lower temperature)
*Cool completely and brush all over with rhum or brandy
*Wrap them individually in aluminum foil and refrigerate. Avoid touching with bare hands to prevent spoilage
*Brush them again with rhum after a week then repeat brushing for four weeks
*To make a chocolate fruit cake, replace 1/2 cup of flour with alkalized unsweetened cocoa powder
