How to bake German Plum Cake | Quick cake | Streusel
Learn how to make this quick plum cake recipe with a homemade easy streusel and fresh plums for a fast and satisfying summer snack cake.
Serves 10
Ingredients:
Cake
125 grams / ¾ cup + 1 teaspoon plain flour
4 grams / 1 teaspoon baking powder
125 grams / ⅔ cup superfine/caster sugar
1 teaspoon vanilla extract
1 teaspoon lemon zest, finely chopped
125 grams / 4.4 ounces butter, softened
2 eggs
800 grams / 1.76 pounds plums, washed and halved
Crumble topping
150 grams / 1 cup - 1 tablespoon plain flour
100 grams / ½ cup superfine/caster sugar
100 grams / 3.5 ounces butter, cubed and softened
½ teaspoon ground cinnamon
Directions:
- Preheat your oven to 180C/350F and greaseproof a springform cake tin.
- Place the flour and baking powder into a bowl and stir together.
- Add in the sugar, vanilla extract, lemon zest butter and eggs and combine on low until the batter comes together and there is no dry ingredients remaining in the base of your bowl.
- Pour into your cake tin and even out.
- Press your plums cut side down evenly into the batter.
- To make the crumble, place the flour, sugar and ground cinnamon into a bowl and stir together.
- Add the butter and cut into the dry ingredients until the mixture resembles a rough crumble.
- Sprinkle the crumble mixture over the plums.
- Place into the oven and bake for 50 minutes or until lightly golden.
- Remove and allow to cool before taking out of the cake tin.
- Slice it up and serve.
- Dig in!

Martha, Thank You for suggesting a plum cake! Finally, there was plums at my box store! The sweetness and tartness of the plums really make this cake a hit! And the addition of the almond flour (ground almonds) adds that buttery taste without any butter! So yummy! The base is a buttery pound cake but those plums.... Muuuuuahhhhh!
Plum Coffee Cake Recipe | Easy German Plum Cake | EASY RICE COOKER CAKE RECIPES
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
* Please READ Important TIPS at the end of each video
INGREDIENTS:
• 1 1/4 cup (162g) ALL PURPOSE FLOUR (do not pack)
• 1/4 cup (30g) ALMOND FLOUR (ground almonds)
• 2 tsp (8g) BAKING POWDER
• 1/4 tsp (2g) SALT
• 2 EGGS
• 1/2 cup (130g) PLAIN YOGURT (Greek, regular or sour cream)
• 1/2 cup (100g) SUGAR (more or less, depends on sourness of plums)
• 1/2 cup (125ml) OIL (light tasting oil)
• 1 tsp (6g) VANILLA FLAVORING
• 4-6 (300g) PLUMS, halve, quarter or sliced (more or less depending on size)
• 2 tbsp (18g) BROWN SUGAR
HOW TO MAKE IT:
1. Depending on the size of your plums, you can halve, quarter or sliced to your desire size. I used 5 medium plums but use more if you wish
2. Whisk together plain flour, almond flour, baking powder and salt to combined
3. Whisk together eggs, yogurt, sugar, oil and vanilla until well mixed
4. Add the dry ingredients into the wet and whisk just to incorporate, about 30 seconds, do not over mix
5. Grease or line your pot, then pour in batter
6. Top with plums then brown sugar
7. Bake 3 Bake Cycles (90 min) and check. Bake longer if needed as rice cooker varies
8. Cool for 30 minutes or so and enjoy! You can also top with powdered sugar if you like it sweeter
OVEN BAKING:
Bake in greased and lined pan (spring form if you have it), in pre-heated oven of 350F (180C) for 50-60 minutes. Ovens varied so check about 50 minutes and bake longer if needed

Ingredients
1/2 cup unsalted butter softened (113g)
8 oz cream cheese softened (225g)
1 cup light brown sugar tightly packed (200g)
1/2 cup granulated sugar (100g)
2 large eggs
1 1/2 teaspoon vanilla extract
2 1/2 cups all-purpose flour (335g)
2 teaspoons baking powder
1 teaspoon cornstarch
1/2 teaspoon salt
1/2 cup buttermilk (120ml)
Cinnamon Swirl
1/4 cup sugar (50g)
1 1/2 teaspoon cinnamon
Streusel Topping
1 1/3 cup all-purpose flour (175g)
1 cup + 2 Tbsp brown sugar packed (225g)
3 Tablespoons granulated sugar
4 1/2 teaspoons cinnamon
1/4 teaspoon salt
10 Tablespoons unsalted butter melted (140g)
Glaze (optional)
1/2 cup powdered sugar (65g)
2-3 teaspoons milk
Instructions
00:00 Introduction
00:12 Preheat oven to 350F and lightly grease and flour a 13x9 baking pan.
00:20 In stand mixer, or using an electric mixer in large bowl, cream together butter and cream cheese.
00:43 Beat in sugars until light and fluffy.
00:56 Add eggs, one at a time, beating until combined. Scrape down sides and bottom of mixing bowl with rubber spatula.
Stir in vanilla extract.
01:09 In a separate, medium-sized bowl, whisk together flour, baking powder, cornstarch and salt.
01:33 Gradually add flour mixture to wet ingredients, alternating with buttermilk, until all of the flour mixture and buttermilk have been combined.
02:25 Spread about half of the batter into prepared pan (batter will be thick).
02:33 Quickly whisk together sugar and cinnamon for cinnamon ripple layer in a small bowl and sprinkle it evenly over the batter.
02:55 Dollop remaining batter over the cinnamon sugar layer and use a knife to spread evenly overtop. It's OK if you end up disturbing the cinnamon sugar layer a bit, it will be a nice swirl when it bakes. Prepare your streusel topping.
Streusel
03:10 Melt butter in a medium-sized bowl on 10 second increments (stirring between) until just melted (you don't want it to be too hot, if it does get too hot allow to cool.
03:21 Use a fork to whisk together your flour, sugars, cinnamon, and salt. Pour melted butter over mixture and use a fork to stir until combined (mixture should be crumbly).
03:54 Sprinkle streusel evenly over batter.
04:03 Bake on 350F for 40-50 minutes (check doneness with a toothpick inserted in center).
Allow to cool before cutting and serving.
Glaze (optional)
04:17 If desired, make glaze by whisking together powdered sugar and milk. Drizzle over cooled coffee cake.

Recipe: Simple German Streusel Plum Cake
This is a simple German recipe for plum cake. Such a great fall classic.
Easy German Plum Cake with Streusel:
750g of fresh plums. Small ones are best.
4 cups (500g) flour
1 cup (250g) butter
1 cup (200g) sugar
1 egg
1 tsp vanilla extract or 1 tbsp vanilla sugar
1 tsp cinnamon
1/4 tsp salt
Cut plums in half and remove pits. Melt butter. Combine all dry ingredients. Add melted butter and egg. Mix or knead together until all the flour is moist with butter. You should be able to press the dough together with your hands and have it stick together. Press 2/3 of the dough into the bottom of a large baking pan. I used a 10 inch round cake pan. Smaller won't work with this recipe. Place as many plums as you can fit onto the dough. Sprinkle the rest of the dough onto the top of the plums. Bake at 200°C or 400°F for 40-50 minutes.

- 3 medium eggs
- 1/2 cup sugar (110 gr)
- 1/2 cup milk or buttermilk (115 ml)
- 1/2 cup oil (I used sunflower oil)(90 ml)
- 1 package baking powder (16 gr, 1 tbsp)
- 1 package vanilla sugar (7 mg, 1 tsp) or 1 tsp vanilla extract
- 1 + 3/4 cup of all-purpose flour (275 gr.)
- 6 fresh plums
For the streusel
- 2 tbsp butter (50 gr.)
- 4 tbsp all-purpose flour (70 gr)
- 2 tbsp sugar (30 gr.)
