What do you make for a group of people who love to eat but can’t have gluten or dairy? This Flourless Chocolate Wave Cake! It’s a rich-but-light-at-same-time cake made with almond flour, a dash of amaretto, lots of chocolate, and lightened with egg whites for a mousse texture. This cake might meet a number of dietary restrictions, but you’d never know from the taste.

Special Equipment:
9-inch springform pan, stand or hand mixer
Ingredients:
Neutral oil and sugar for the pan
10 ounces (283g) semisweet chocolate (preferably 66 to 68% cacao), coarsely chopped (1 2/3 cups)
1/2 cup neutral oil, such as vegetable or grapeseed (4 oz / 112g)
3 tablespoons amaretto or dark rum (1.5 oz / 43g)
6 large eggs (10.6 oz / 300g), separated
1/2 cup almond flour (2.1 oz / 60g), sifted if needed to break up lumps
1 teaspoon Diamond Crystal kosher salt (0.11 oz / 3g)
1/2 cup plus 2 tablespoons sugar (4.4 oz / 125g)
1 teaspoon vanilla extract

구름케이크. 구름 계란후라이!!! 수플레 계란후라이/수플레 오믈렛
400번 달고나 커피 따라서 계란 후라이 만들었어요. 계란후라이라고하고 수플레오믈렛이 올라오길래 계란후라이 색감 그대로 살려서 만들었더니 케이크처럼 되었네요. 생김새는 치즈생크림케이크인데, 맛은 ?????!!!!!!!
~추가 - 레시피~
제가 올린 다른 영상들은 그대로 만드시면 맛이 보장되는데, 이건 호불호가 너무 갈리는 음식이라 취향에 맞춰 만드시거나 영상으로만 즐기시라고 정확한 레시피를 기제하지 않았습니다...추후 많은 분들이 요구하셔서 레시피 올립니다. 보시고 취향대로 가감해서 드시는 것 권합니다. 정말 호불호 있어요
재료 : 계란 6개 (팬 크기에 맞춤), 소금, 설탕, (버터)
* 계란 비린맛에 민감하시면 레몬을 첨가하시면 좋습니다
* 계란 1~2개정도만 하셔도 됩니다 (방법 아래 참조)
* 소스 : 전 영상에서 계란후라이라는 컨셉으로 케찹을 뿌렸지만, 꿀, 메이플 시럽같은 단소스가 어울립니다. 댓글에 돈까스 소스, 매운 소스, 치즈 추천도 있었습니다.
1) 계란을 노른자 흰자를 분리합니다.
2) 계란 노른자에 소금 한꼬집, 설탕 1 tsp 넣고 잘 섞어줍니다.
3) 계란 흰자를 머랭치기를 합니다.
* 단맛 계란을 원하시면 소금 아주 조금에 계란 1개당 설탕은 1/2큰술정도 넣습니다 (소금 생략 가능).
* 설탕은 중간에 2~3번에 나누어 넣어주어야 거품이 죽지 않습니다.
4) 팬에 양옆까지 꼼꼼히 식물성 기름을 바르고, 약불에서 노른자부터 잘 펴서 익혀줍니다. 노른자가 살짝 익었을 때 노른자를 살짝 들어 밑으로 버터를 추가하거나 필요에 따라 식물성 기름을 추가해도 됩니다. 계란 갯수가 적으면 처음부터 버터에만 익혀도 관계 없습니다.
5) 위에 머랭을 잘 펴서 얹어준 후 뚜껑을 닫고 약불에서 5분정도 충분히 익힙니다.
불상태나 양에 따라 시간 조절 해주십시요.
* 충분히 익히기 위해 양면을 뒤집어 가며 익혀주어도 됩니다
* 계란을 1~2개만 사용하시는 경우는 노른자를 팬에 넓게 편 후 흰자를 가운데 길게 넣어주고 노른자로 흰자를 말아서 모양을 냅니다.
6) 접시에 옮기고 소스를 첨가합니다.
* 설탕 베이스일때는 꿀을 첨가해 먹습니다.

Ingredients
Sponge:
• 200g plain flour,
• 200g caster sugar,
• ¼ cup cocoa,
• 1 teaspoon baking powder,
• 1 teaspoon baking soda,
• pinch of salt,
• 2 eggs,
• ½ cup oil,
• ¾ cup milk,
• 1 tablespoon vinegar,
• 2 teaspoons vanilla extract,
• ½ cup hot coffe.
Frosting:
• 250g mascarpone,
• 200ml double cream,
• ¼ cup cocoa,
• ¼ cup maple syrup.
Additionally some maple syrup for serving and some butter for greasing pan.
