Sour Cream Lemon Pie
RECIPE:
INGREDIENTS:
Crust:
9 inch frozen pie crust (I use Marie Callender's)
1 egg
1 tsp. water
Lemon Layer:
2 large lemons
1 1/2 cups water
1 cup sugar
1/4 tsp. salt
2 Tbsp. all-purpose flour
3 Tbsp. corn starch
2 Tbsp. salted butter (wait to add)
4 large egg yolks (wait to add)
Sour cream layer
1 cup sour cream
1/4 cup sugar
Whipped Cream:
2 cups heavy whipping cream
4 Tbsp. sugar
INSTRUCTIONS:
Crust:
Thaw your pie crust for 10 minutes on the counter. Whisk together the egg and tsp. of water. Using a pastry brush spread the egg wash over the pie crust. Prick the pie crust with a fork generously, even on the edges. Bake according to package directions. Mine took 12 minutes.
Lemon Layer:
Zest the lemons. Cut the lemons in half and juice them, discard seeds.
Whisk the egg yolks in a small bowl, set aside. Have your butter out and ready as well.
In a medium sized sauce pan add the water, sugar, salt, lemon zest, lemon juice, flour and cornstarch, whisk together. Set the heat to medium high heat. Bring this mixture to a boil, whisking constantly.
Add the butter to the lemon mixture, stir and let melt in. Add a scoop of this hot mixture to the egg yolks bowl, stir them together. Add this egg yolk mixture to the rest of the lemon filling. Stir. Let boil for 1 more minute, whisking constantly.
Pour the lemon filling in to the prepared and baked pie crust. Refrigerate for an hour or longer.
Sour Cream Layer:
Preheat oven to 350 degrees.
In a small bowl mix together the sour cream and sugar. Spread this mixture over the lemon layer.
Bake for 7 minutes.
Remove from oven and refrigerate for at least 3 hours before making and topping with whipped cream in next step.
Whipped Cream
In a large bowl add the heavy cream and sugar. Using a hand mixer or stand mixer with whisk attachment, blend until stiff peaks form.
I used a 16 in piping bag and a Wilton 1M piping tip to decorate the pie with the whipped cream. Keep refrigerated until ready to serve.

Kool-Aid Pie Recipe - How To Make No Bake Kool-Aid Pie With Cream Cheese - Summertime Dessert
Hello and Happy 4th of July my Friends, welcome to my Southern Kitchen!
Are y’all a fan of Kool-Aid, y’all are in for a treat! I am making a yummy and refreshing No Bake Kool-Aid Pie!
Simple, easy, Oven-Free, and bursting with flavor of the taste of Kool-Aid! Another ultimate Summer Dessert, great for BBQs, Family Reunions, Fish Frys, also for the 4th of July; everyone will love and enjoy this Pie!
Graham Cracker Crust
2 cups graham cracker crumbs
1/4 cup white sugar
1/2 cup (1 stick, 8 tablespoons) unsalted butter, melted and cooled
Filling
1 (0.13 ounce) package pink lemonade (or any flavor) kool-aid mix
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1 teaspoon pure lemon extract (if using the lemonade or pink lemonade flavor)
Pink Food Coloring, optional (if using pink lemonade)
Whipped Cream
Lemon slice and whipped cream, for garnish (optional)
Whipped Cream
2 cups cold heavy whipping cream
2 heaping tablespoons powdered sugar (more or less, depends how sweet you like)
Ellen’s Magic: You may use a store-bought 9-inch graham cracker crust, also you may use another extract depends on what flavor kool-aid you use.
Preheat Oven to 350 Degrees
For the Crust: Crush the graham crackers until they are fine crumbs (only if you crush them yourself) then add them into a large bowl then pour in the sugar and melted butter and stir until well combined. Pour the crust mixture into a greased 9-inch deep dish pie plate and press evenly and firmly into the bottom and sides. Bake for 7 to 8 minutes. Remove from the oven and cool completely on wire rack.
For the Whipped Cream: In a medium or large chilled bowl using a electric hand mixer or stand mixer with whip attachment, add the whipped cream and powdered sugar; whip on high until reaches stiff white peaks.
In a large bowl using a electric hand mixer, add in the cream cheese and cream on medium speed until fluffy. Next add in the sweetened condensed milk, kool-aid mix lemon extract, and food coloring (if desired) and continue mixing until well combined. Add and fold in the whipped cream. Pour the filling into the prepared graham cracker crust, place the pie in the refrigerator and chill overnight until firm. Garnish with lemon slice and whipped cream (if desired), cut into desired slices, serve and enjoy!
