2 c Sliced ripe mangos
2 tb Lemon juice
1 tb Margarine
1/3 c Brown sugar
1/4 c Margarine
3/4 c Sugar
1 Egg
1/2 c Milk
1 1/4 c Flour
2 ts Baking powder
1/4 ts Salt
Pour lemon juice over mangos and let stand 15 minutes. Melt 1 Tbsp. margarine in 8 in. cake pan or casserole. (Do not use iron skillet as mangos will darken.) Add brown sugar and cover with mango slices. To prepare cake batter, cream margarine; add sugar and cream; add beaten egg. Sift dry ingredients and add alternately with milk. Pour over mangos and bake 50 to 60 minutes at 375. When cake is done, turn upside down and serve while warm. Mangoes give a new take on the traditional Pineapple Upside-Down Cake. The tropical twist will definitely be a crowd-pleaser for all those warm weather gatherings!
This is how to make Mango Upside-Down Cake:
Mango Upside Down Cake
Ingredients:
150 g Butter, softened (70 g for the Caramel Sauce + 80 g for the Cake) / 2/3 cup (5 Tbsp + 6 Tbsp)
130 g Brown Sugar/ 1/2 cup
2 fresh ripe Mangoes, sliced (about 1 cm thick)
250 g All-Purpose Flour/ 1 1/2 cups
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
200 g Sugar/ 3/4 cup
2 Eggs
1 tsp Vanilla Extract
150 g Sour Cream/ 1/2 cup
Directions:
1. Preheat oven to 165°C/ 325°F. Grease a cake pan (22 cm/ 9 inches) with butter and set aside.
2. In a small saucepan, add the butter and brown sugar. Cook just long enough for the brown sugar to melt. Remove from the heat.
3. Pour the sauce in the bottom of the prepared cake pan, arrange the slices of mangoes over it and set aside.
4. In a medium bowl, stir together flour, baking powder, baking soda, and salt. Set this aside.
5. In a large bowl, using an electric mixer, beat the remaining 80 g of butter on high until light and fluffy. Add granulated sugar and beat until well combined. Beat in eggs, one at a time, scraping down bowl as needed. Beat in vanilla extract.
6. With the mixer on low, add the flour mixture alternating with the sour cream. Beat this just until well combined.
7. Using an offset spatula, spread the mixture evenly over the mangoes. Bake until cake is dark golden brown and a toothpick inserted in center comes out clean for about 45 - 50 minutes. Let cake cool in the cake pan for about 10 minutes. No longer! Run an offset spatula around the edge of the pan and invert cake onto a serving plate.

3 Firm ripe mangoes
1/2 stick unsalted butter or 4TSP
1/2 Cup brown sugar/ white sugar
For the cake batter:
1 1/2 Cup All purpose flour/ maida
1 tsp Baking powder
1 tsp Baking soda
1/2 tsp salt
1 stick Unsalted butter
3/4 Cup granulated sugar
2 whole eggs
1 tsp vanilla extract
3/4 Cup milk/ mango puree

Being home bound certainly has its perks, besides the warm sunshine, blue sky and surreal peace (sometimes????????). I know you're wondering what else could be better than that! How about plenty of tropical fruit! We have banana, orange and mangoes all around. And when summer draws near I lust for that deliciously sweet orange & yellow-colored fruit.
And lots of fruit means thinking up lots of recipes to use them - year in year out. I've made mango salsa which goes great atop chicken, fish, shrimp or pork, mango smoothies and cocktails like my love’s famous Mango Colada & Mojito but when I got thinking of a cake, I knew I just had to try making an Upside Down confusion of sorts And it is not something anyone would expect to see which made it even more appealing.
The tricky part about making this cake was cooking up the sweet caramel sugar for the base coz you don’t want It too brown as it does darken while baking. After that, it was smooth sailing to sheer heavenly bliss....
