1/2 c Butter 1/2 c Packed brown sugar 2 md Cooking apples, peeled & Sliced 1/2 c Whole berry cranberry sauce 1 1/3 c Flour c Granulated sugar 2 t Baking powder 1/2 t Salt 1/3 c Shortening 2/3 c Milk 1 t Vanilla 1 Egg Heat oven to 350 degrees. Melt butter in heavy 10-inch oven proof skillet or 9x9x2 inch square pan. Sprinkle brown sugar evenly over butter. Arrange apple slices in row around edge of skillet. Arrange remaining slices in 2 more rows in skillet. Spoon cranberry sauce between rows. Mix flour, granulated sugar, baking powder and salt in a large bowl. Add shortening, milk and vanilla. Beat on medium speed 2 minutes, scraping bowl constantly. Add egg. Beat on medium speed 2 minutes, scraping bowl frequently. Pour over fruit in skillet. Bake about 50 minutes until toothpick inserted in center of cake comes out clean. Immediately invert onto heatproof serving plate. Leave skillet over cake a few minutes (brown sugar mixture will run down over cake); remove skillet. Serve warm with whipped cream or vanilla ice cream if desired.

Pumpkin apple upside down cake is a seasonal take on my favorite pineapple upside down cake. Moist, tender apples baked in a brown sugar caramel with pecan halves and become the top to an amazing moist pumpkin cake! Who wouldn't love that?
This one is super simple and made from things you will have in your pantry. I'm sure if you look, you can find a can of pumpkin in the back of that cabinet! If not, got get one because this cake is totally worth it!
This cake is perfect for a fall dessert, or anytime you need a wonderful, knock their socks off finish to a fabulous meal. Take this to your next church supper or pot luck or even plan to have this on your dessert table for the upcoming holidays!

Pineapple Upside Down Cake
When I was growing up, before the advent of Mango Cake, Black Forest, Ube Cake, etc, pineapple upside down cake was our version of a special cake. We get to eat this cake only on special occasions. Today, you can buy or eat this anytime of the year. The good thing about this cake is that it is inexpensive to make and it does not require refrigeration and no frosting is needed.
