How To make Rhubarb Upside Down Cake
3 tb Butter
2/3 c Sugar, granulated
1 lb Rhubarb; trimmed
-about 10 stalks 1 1/2 ts Orange rind; grated
CAKE:
1/2 c Butter; softened
3/4 c Sugar, granulated
2 Eggs
1 ts Vanilla
1 1/2 c Flour all purpose
1 1/2 ts Baking powder
1 ts Baking soda
1 ts Orange rind; grated
1/4 ts -salt
1 c Yogurt, plain
Grease sides of 9" springform pan; pour in butter and sprinkle with sugar. Cut rhubarb into 2 inch pieces. Arrange in tight rows in bottom of pan, starting with middle three rows and trimming to fit. Chop remaining pieces coarsely; sprinkle on top with orange rind, set aside. CAKE: In large bowl, cream butter with sugar till fluffy. Beat in eggs, one at a time and vanilla. Stir together flour, baking powder, baking soda, orange rind and salt. Stir half of the flour mixture into creamed mixture; stir in yogurt and remaining flour mixture. Spread carefully over rhubarb, mounding higher at edges, Wrap foil around bottom of pan and set on baking sheet. Bake in 350F oven for about 1 hour or till cake springs back when lightly touched. Let cool on rack for 15 minutes. Invert cake on serving platter. Serve warm. MAKES 8-10 SERVINGS

Today we will be making Upside Down Rhubarb Cake, made with fresh rhubarb and homemade cake. Then topped with a thick cream and berry sauce. SEE RECIPE BELOW!
Up Side Down Rhubarb Cake
Ingredients for Brown Sugar Sauce:
9 Sticks, fresh rhubarb 1/2 Cup, brown sugar
1/4 Cup, orange juice Lemon Zest
Method for Brown Sugar Sauce:
In a small saucepan add 1/4 brown sugar and orange juice and bring to a boil, 2 to 3 minutes then simmer for 2 minutes until the mixture is like a syrup, then remove from heat.
This is for pouring over rhubarb after layered in a square or rectangle pan.
Ingredients for Batter:
3/4 Cup, white sugar 1 Cup, room temperature butter
3 Large, eggs 1 Tsp, vanilla
2 Cups, flour 1 1/2 Tsp, baking powder
1 Cup, evaporated Milk ( room temp ) or fresh milk.
1/2 Tsp, Lemon Juice
Method for batter:
Cream together butter and sugar, crack eggs in a little bowl first then add eggs one at a time mix well until light and fluffy.
Mix in vanilla, In another bowl sift and mix together flour and baking powder.
Folding dry ingredients with creamed mixture, don't over mix, after add room temp milk to your mixture continue to mix or fold all ingredients together, then add lemon juice.
Grease one square or rectangle pan or line with parchment paper.
Layer the pieces of rhubarb at the bottom of pan, then pour syrup over rhubarb then batter over top.
Bake in a 350°F pre-heated oven for 45 to 60 minutes depending on your oven, always check the middle of your cake first with a toothpick before removing it from the oven, if it comes out dry it's done if wet close door and leave for another five minutes.
Remove cake from oven let set in cake pan for 5 to 10 minutes before removing it from the pan.
BAKING TIPS:
Before starting have all ingredients measured and supples ready to go.
After each step remove containers from counter so you will know they are added.
Cracking eggs in a separate bowl you can check for shells or surprises.
Leave all rhubarb peels on if you wish to have more colour and form.
You may need to run a knife around the sides to remove cake from pan if stuck.
Don't over bake your rhubarb cake this will make your cake dry.

The ingredients and utensils needed for this recipe are as below:
-400gr rhubarb
-75gr butter (or 1/3 cup)
-200gr sugar (or 1 cup)

-100gr melted butter (or 7 tbsp)
-1/2 tsp vanilla
-175gr sugar (or 3/4 cup)
-3 eggs
-170mL whole milk (or about 3/4 cup)
-250gr flour (or 1 1/2 cups)
-1 pack of baking powder (7gr, or one teaspoon)
Pre-heat the oven to 170*C and butter a 9 inch round pan. Mix the melted butter with the sugar and vanilla. Add the eggs and milk and mix well. Incorporate the flour and baking powder and set aside.
Wash the rhubarb and cut it into small chunks before patting it dry. Prepare the caramel by heating up the butter and sugar until it becomes thick and golden brown.
Spread the caramel onto the bottom of the 9 pan and then add the rhubarb layer before covering it with the batter. Cook for about 45min or until knife comes out clean.
Once fully baked, this cake needs to be flipped onto a plate immediately otherwise the caramel will harden and stick to the bottom of the pan (sad).
*disclaimer* : if you're worried about the water content in the rhubarb you can mix it with 1-2 tbsp of sugar and let it sit while you prepare the cake. Make sure to pat it dry before adding it to the caramel layer! :)
