How To make Israeli Upside Down Apple Cake
Apples: 1/4 c Margarine
1/2 c Brown sugar
1/2 c White sugar
8 Apples; peeled and cored
Walnuts Raisins Juice of 1 lemon Batter: 5 Eggs; separated
5 tb Sugar
1 ts Lemon juice
4 tb Potato starch; sifted
Recipe by: Net To prepare the apples, melt the margarine and the sugars in the bottom of a deep round pan large enough to hold the apples comfortabl y. Arrange the apples over the sugar. Fill the core openings with walnuts and raisins. Pour the lemon juice over the apples. Bake in a preheated 375 degree F oven for 30-35 minutes until the apples are tender. To prepare the batter, in a large mixing bowl beat the egg yolks with the sugar until very light. Add the lemon juice and sifted pot ato starch. In a clean bowl, with clean beaters, beat the egg whites until stiff but not dry. Carefully fold the beaten egg whites i nto the egg yolk mixture. Pour the batter over the hot apples and bake for an additional 30 minutes or until the cake tests done. L et the cake rest on a cake rack for 10 minutes before turning it out, upside down, onto a large cake plate. Serve cold. -----

INGREDIENTS:
1-1/2 cups {about 2 medium} Gala Apples
1 teaspoon Cinnamon, divided
1 cup Dark Brown Sugar
7 tablespoons Unsalted Butter, divided {6T for the cake 1T for the glaze}
2 whole Eggs
2/3 cup Whole Milk
1/2 teaspoon Real Vanilla Extract
1-1/2 cups All Purpose Flour
2 teaspoons Baking Powder
1/8 teaspoon Fresh Nutmeg
6 teaspoons Honey
DIRECTIONS:
Line and spray {I like to use my Misto} a 9-inch round cake pan.
Core and dice up 1-1/2 cups of apples, that's roughly about 1-1/2 to 2 apples.
Toss the diced apples with 1/2 teaspoon cinnamon and place them in the bottom of your prepared pan.
In the same bowl add 6 tablespoons of unsalted butter and brown sugar. Mix until crumbly, about one minute.
Beat in the eggs {one at a time}. Then, with the mixer on low, blend in the vanilla and whole milk.
Combine the flour, remaining cinnamon and baking powder. Grate in 1/8 teaspoon of fresh nutmeg, stir.
Add in the dry ingredients and mix by hand until combined thoroughly, then pour over apples and spread evenly.
Bake in preheated 350 degree oven for 25-30 minutes or until a cake tester comes out clean. Let the cake cool for 10 minutes before inverting onto a cake plate.
Meanwhile in a small bowl measure and add the 6 teaspoons of honey and the remaining tablespoon of butter. Zap it in the microwave for 20 seconds until melted and then drizzle it all over the cake cake.
Cut into eighths and serve warm with whipped cream or vanilla ice cream.
Serve with hot cider, coffee or tea! :)
