Ingredients
4 small apples, peeled, halved, cored
1 cup raw walnuts
1 cup all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon nutmeg
1½ teaspoon ground cinnamon
½ cup granulated sugar
2 large eggs, room temperature
½ cup plain whole-milk Greek yogurt, room temperature
½ cup light brown sugar, divided
100 ml unsalted butter, room temperature
Icing sugar (for serving)
Preparation
1, Put all the dry ingredients walnuts, flour, salt, baking soda, baking powder, nutmeg, and cinnamon in a
large mixing bowl, combine in granulated sugar, mix well.
2, Put all the wet ingredients eggs, yogurt, brown sugar, and half amount of the butter in another large
mixing bowl, mix well. Then, combine with the dry ingredients.
3, Preheat oven to 350°. Meanwhile, heat a 10 cast iron skillet over medium heat. Add the rest butter and
swirl to coat; arrange apple halves cut sides down in a single layer. Cook apples, undisturbed, rotating
skillet on burner as needed for even browning, until cut sides are golden brown, 5–10 minutes. Turn apples
over and cook on rounded sides until they start to release their juices and the tip of a knife slides through with
slight resistance, about 5 minutes. Transfer apples to a plate, arrange cut sides up, and let cool.
4, Add ¼ cup brown sugar into the skillet. Stir with a wooden spoon until sugar is dissolved, then turn off the heat.
Arrange apple halves cut sides down over caramel in skillet. Scrape batter over apples and smooth surface.
5, Bake cake until it is browned across the entire surface and the center springs back when gently pressed, 30
–35 minutes. Use a toothpick poke to test, if the toothpick is smooth, means it's ready. Let cake cool in skillet
10 minutes, then flip over to a big plate. Dusting icing sugar to serve.
Enjoy!
