Today I’m testing Claire Saffitz’s recipe for Apple-Walnut upside down cake. This recipe is perfect for fall with warm spices and fresh fall apples. Clean up is easy with the entire batter built directly Int’l the food processor. Plus the apples are browned, Carmelo is made, and cake is baked all in the same pan! This cake is perfect for dessert, but it’s not overly sweet so it also makes a great tea cake or breakfast cake to enjoy with coffee.

INGREDIENTS
1 cup raw walnuts or pecans
10 Tbsp. unsalted butter, room temperature, divided
4 small or 3 large baking apples (such as Pink Lady), peeled, halved, cored
½ cup (packed) light brown sugar, divided
1 cup all-purpose flour
1 tsp. kosher salt
1 tsp. baking soda
½ tsp. baking powder
¼ tsp. freshly grated nutmeg
1½ tsp. ground cinnamon, plus more for serving
½ cup granulated sugar
2 large eggs, room temperature
1 tsp. vanilla extract
½ cup plain whole-milk Greek yogurt, room temperature
Lightly sweetened, softly whipped cream (for serving)

Caramel Apple Upside Down Cake | Easy Recipe using Box Cake Mix
Upside down cakes always give a wonderful presentation, and this one doesn't disappoint. This cake is great all year long, but especially in the fall when apples are at their peak.

1 Yellow Box Cake Mix (I like Betty Crocker or Duncan Hines)
1 1/4 C. Lukewarm water
1/3 C. Vegetable Oil
3 Large Eggs at Room Temperature
1/4 t. Cinnamon
Pinch Nutmeg
Pinch Allspice
Caramel Sauce
1 Stick Salted Butter (1/2 Cup)
1 C. Light Brown Sugar, packed
1/4 C. Heavy Whipping Cream
Topping
2 Medium Granny Smith or Golden Delicious Apples; Peeled, Cored and sliced
1/2 C. Chopped Pecans (Optional)
Bake in buttered 9x13 pan @ 350 degrees 40-50 minutes or until golden brown and tester comes out clean.
