Delicious Pineapple Upside Down Cake Recipe | Easy & Moist
Hello beautiful people! ???? Welcome to my channel. Today I made in honor of my late sister Natalie’s favorite cake, pineapple upside-down cake. This cake is easy to prepare even for beginners. This pineapple upside-down cake is delicious and super healthy.
Pineapples are loaded with many vitamins and minerals such as vitamin C, manganese, vitamin B6, copper, thiamin, folate, potassium, magnesium, niacin, and iron. Pineapples are a good source of antioxidants. Adding pineapples to your diet can help you with digestion, help reduce the risk of cancer, boost immunity, ease symptoms of arthritis, and speed recovery after surgery.

Ingredients
• 2 tbsp butter
• ½ cup vegetable oil
• 1 cup packed brown sugar
• 1 can (20 oz) pineapple slices in juice, drained, juice reserved
• 1 jar (6 oz) maraschino cherries without stems, drained
• 1 box Betty Crocker™ Super Moist ™ yellow cake mix
Vegetable oil and eggs called for on cake mix box
Instructions
• Heat oven to 350°F (325°F for dark or nonstick pan). In 13x9-inch pan, melt butter in oven. Sprinkle brown sugar evenly over butter. Arrange pineapple slices on brown sugar. Place the cherry in the center of each pineapple slice, and arrange remaining cherries around slices; press gently into brown sugar.
• Add enough water to reserved pineapple juice to measure 1 cup. Make cake batter as directed on the box, substituting pineapple juice mixture for the water. Pour batter over pineapple and cherries.
• Bake 42 to 48 minutes (44 to 53 minutes for dark or nonstick pan) or until a toothpick inserted in the center comes out clean. Immediately run a knife around the side of the pan to loosen the cake. Place a heatproof serving plate upside down onto pan; turn plate and pan over. Leave pan over cake 5 minutes so brown sugar topping can drizzle over cake; remove pan. Cool 30 minutes. Serve warm or cool. Store covered in refrigerator.
Expert Tips
• Serve with sweetened whipped cream or an 8-oz container of frozen (thawed) whipped topping (3 cups) if desired. For 3 cups of sweetened whipped cream, in a chilled medium bowl, beat 1 1/2 cups whipping cream and 2 tablespoons granulated sugar with an electric mixer on high speed until soft peaks form.
• Betty Crocker™Super Moist™butter recipe yellow or white cake mix can also be used to make this popular cake. Make batter as directed on the box, using 1/2 cup reserved pineapple juice and 1/2 cup water instead of water called for on the box. For the white cake, bake dark or nonstick pan for 42 to 48 minutes.
• Try fresh chopped herbs or dried spices added to the brown sugar and butter mixture for a new flavor twist.

Today I'm sharing my easy to make and healthy version of a Pineapple Upside Down Cake. This version isn't loaded with butter and oil like the traditional recipes. My cake includes healthy options and it turns out moist, fluffy and delicious.

PINEAPPLE UPSIDE-DOWN CAKE
Topping:
- 1/4 cup apple sauce
- 1/3 cup Brown sugar or Maple Sugar
- Pineapple slices
Cake Ingredients:
- 1/2 cup Soy Milk + 2 Tbsp.
- 1 tsp. Apple Cider Vinegar
- 1/4 pineapple juice
- 1/2 cup apple sauce
- 1 tsp. Pure Vanilla extract
- 1/2 cup sugar
- 1 1/2 cups flour
- 1 1/2 tsp. Baking powder
- 1 flax egg = 1 Tbsp. Flax meal & 3 Tbsp. Water. Combine, set aside and allow to thicken.
Method:
1. Preheat oven to 350°F
2. Make the topping and add to the bottom of a 9 inch round baking pan. Arrange pineapple slices around the pan as well.
3. Next you’re going to make your flax egg. Add 1 tablespoon of flaxseed meal into a small bowl and 3 tablespoons of warm water. Combine well and set aside to thicken up.
4. Next add the milk, apple cider, pure vanilla extract, sugar and applesauce. Mix well.
5. Next add the flax egg to the wet ingredients and combine it well.
6. Now in a large bowl combine all your dry ingredients be sure to mix it well.
7. Transfer all the dry ingredients into the wet ingredients and combine.
8. Pour over the pineapple rings in the pan and evenly distribute the batter out.
9. Bake for 35 to 40 minutes in a 350°F oven.
10. Once it’s baked allowed to completely cool before transferring to a plate or serving dish. Once it’s cooled you can place a plate on top of the pan and flip it over. The cake should slide out easily if you have a nonstick pan if not you may have to pre-oil your pan in order to ensure the cake can be removed easily.

½ cup Oil

Pineapple Upside-down Cake.... Low carb
Pineapple Upside-down Cake with Cream... ????
Recipe...makes 2x (Ramekins) cakes this size ...
1 egg
1x Slice of Pineapple Diced (only 4 Carbs per full Slice)...
1x tbls Coconut Flour
1x tbsp of Thick Double cream
1/2 tsp vanilla essence
1tsp of melted butter
1x tbsp of sweetner...
1/2tsp baking powder...
Skinny Syrup (optional)
Serve with extra thick double cream
Method
Mix all ingredients in a mug, (except the Pineapple) ..
If it looks to dry add a few drops of water...
(The consistency should be like a (smooth custard) ....
Split the mixture equally between the two buttered ramekins...
Divide the cut up Pineapple between the two ramikins, and give it a stir...
Then cook in Microwave on high for 2.5 - 3.5mins according to your microwave power....
Tip... I used Tinned Pineapple in juice, (10 slices) drained the juice then I froze the remaining Pineapple rings in packs of 2...
