How To make Old Fashioned Pineapple Upside Down Cake
3 cn 8 1/2 oz size sliced pine-
Apple in heavy syrup (12) 1/4 c Butter
2/3 c Light brown sugar, packed
1 c Unsifted flour
1/3 c Pecan or walnut halves
3/4 c Sugar
1 1/2 t Salt
1/4 c Shortening
1/2 c Milk
1 Egg
1 c Heavy cream, chilled
Preheat oven to 350F. Drain the pineapple slices, reserving 2 T syrup. In a heavy cast iron frying pan (10"), melt the butter over medium heat. Add brown sugar, stirring until the sugar is melted. Remove from heat, and arrange 8 of the pineapple slices on the sugar mixture, overlapping the slices slightly around the edge of the pan. Put one slice in the center. Place the walnut or pecan halves in the center of each slice of pineapple. Arrange around the inside edge of the skillet the remaining pineapple, cut in halves. Put pecans or walnuts in the center. In a medium bowl, mix the flour, sugar, baking powder, and salt.Add shortening and milk. Beat 2 minutes at high speed or until mixture is smooth.Add egg and reserved 2 T of syrup. Beat 2 minutes longer. Gently pour cake batter over pineapple in skillet. Spread evenly being careful not to disarrange the pineapple. Place on center rack of oven and bake 40-45 minutes, or until cake springs back to light touch. After the cake is done, let the skillet stand on a wire rack 5 minutes to cool just slightly, and then loosen edges with a small spatula. Place serving platter over the cake, and turn upside down. Shake gently, and lift off skillet. Serve with 1 cup heavy cream whipped.

I wish you could taste it through the computer, but since you can't you will just have to make it!! I am going to list the ingredients below. INGREDIENTS:
-1 stick (8 tablespoons) of unsalted butter.
-1 1/2 cups brown sugar, tightly packed.
-12-13 pineapple rings (about 1 1/2 cans).
-12-13 maraschino cherries,drained (you can find these in the baking aisle of the grocery store)
-2/3 cups unsalted butter at room temperature.
-1 1/3 cups granulated sugar.
-2 teaspoons pure vanilla extract.
-4 large eggs, at room temperature.
-3 1/3 cups all-purpose flour, sifted.
-1/4 teaspoon salt (I use Kosher salt).
-4 teaspoons baking powder (NOT baking soda).
-1 1/3 cups pure pineapple juice

This is a cake i have made so so many times for my friends and my old school soul food crew and their kids love it
I cant believe i have never ever shared this recipe
So here is this weeks Friday night cake of the week
OLD SCHOOL PINEAPPLE UPSIDE DOWN CAKE
Ingredients
For the Topping:
¼ cup unsalted butter melted
½ cup light brown sugar
1 20-ounce can pineapple slices drained
Maraschino cherries stems removed
For the Cake:
1 ½ cups all-purpose flour
1 ½ tsp baking powder
½ tsp kosher salt
½ cup unsalted butter (1 stick) room temperature
¾ cup granulated sugar
2 large eggs room temperature
2 tsp vanilla extract
⅓ cup sour cream room temperature
⅓ cup whole milk room temperature
Instructions
Preheat the oven to 350F.
For the Topping:
Pour melted butter into a 9-inch round 2-inch-deep pie dish. Swirl to coat the bottom and up the sides of the dish. Sprinkle brown sugar evenly over the bottom of the dish.
Pat pineapple slices with a towel to remove excess liquid. Place one slice in the center of the dish. Arrange 6 more around it. If you’d like, cut 3 more slices in half and arrange them around the sides of the dish. Place a cherry in each slice’s center and fill in any other gaps between slices.
For the Cake:
In a medium bowl, whisk together flour, baking powder, and salt.
In a large liquid measure cup, whisk together sour cream and milk.
In a large mixing bowl or the bowl of a stand mixer with the paddle attachment, beat butter until creamy. Add the sugar and beat on medium speed until light and fluffy, about 3 minutes.
Add the eggs one at a time, beating until well combined before adding the next. Beat in the vanilla.
Beating on low speed, add a third of the flour, mixing just until combined. Add half of the sour cream mixture, beating just until combined. Continue alternating with the remaining flour and sour cream mixture.
Pour the batter into the pie dish and carefully spread to the edges of the pan.
Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. You may want to cover with foil after 30 minutes if the cake is already golden brown.
Cool the cake on a wire rack for 15 minutes. Place a cake plate or stand over the top of the cake and carefully invert. Cool for another 20 minutes or completely before serving.
