How To make Pineapple Upside Down Cake (Micro)
1/4 c butter or margarine
1/2 c firmly packed brown sugar
1 cn (8 oz.) pineapple tidbits,
drain and reserve juice. Maraschino cherries (opt.) 1 pk (9 oz.) yellow cake mix.
1/2 c (reserved) pineapple juice
2 eggs
Combine butter and brown sugar in (8x8 inch) baking dish. Microwave 1-1/2 to 2 minutes on HIGH, or until butter and sugar melt. Stir. Arrange pineapple and cherries in syrup.
Blend cake mix, pineapple juice and eggs in medium mixing bowl on low speed of electric mixer. Beat on medium speed for two minutes. Pour evenly over fruit. Micro 8-1/2 to 10 minutes on HIGH, or until wooden pick inserted in center comes out clean. (Rotate dish 1/2 turn after 5 minutes) Immediately invert onto serving plate and remove dish. Cool

Pineapple Upside Down Cake, made easy!!
This beautiful cake was absolutely amazingly delicious!! Simple recipe
Ingredients:
Pineapple topping:
1/4 -1/2 brown sugar
3 tbsps melted Butter
20oz can pineapple slices
8-12 maraschino cherries (pat dry)
Yellow Cake:
1 1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 cup Butter
3/4 cup Sugar
2 Eggs
1 tsp Vanilla Extract or Essence
1/4 cup pineapple juice (from can)
1/4 cup milk
Bake into a 350 degree preheated oven for about 35-40 minutes or until toothpick comes out clean.
Allow to cool for at-least 10 minutes before flipping.

Hello Arfalicious Foodies, hope your weekend fun is in full swing. Yesterday, just when I was giving finishing touches to my Bolo De Ananas, i.e Pineapple upside down cake, my 8-year-old son insisted to make one for himself as well.
So, guess what, there was no better way to try this recipe but into a quick 2 minutes cup cake. So here it is. This was truly amazing in look and WOW in taste. Do not miss out, get up and treat yourself. Happy Baking!!

For Cup Preparation:

Teacup = 400 ml – Our recipe is with regards to this cup
Butter = 1 Teaspoon to go in the cup
Butter = for Greasing the cup as required
Pineapple = 1 Ring – from Tin with round slices
Cherry = 1
For Cake:
----------------------
Butter = 1 Tablespoon
Icing Sugar = 3 Tablespoon
Egg = 1
Plain Flour = 5 Tablespoon
Lemon Juice = 2 Drops
Vanilla Essence = ¼ Teaspoon
Baking Soda = 1 Generous Pinch
Baking Powder = 1/8th Teaspoon
Pineapple Juice = 1 Teaspoon
Microwave it for Two minutes.
Tip: Gently move butter knife around the edges of the cake and take it out on a plate, It looks amazing and tastes super delicious Arfalicious. Enjoy!!
