How To make Eggnog Pound Cake
1 c Butter or margarine; soft
1/2 c Shortning
3 c Sugar
6 Eggs
3 c Flour
1 c Egg nog
1 c Flaked coconut
1 ts Lemon extract
1 ts Vanilla
1/2 ts Coconut extract
Cream butter and shortning. Gradually add sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating well after each addition. Add flour to creamed mexture alternately with eggnog, beginning and ending with flour. Mix just until blended after each addition. Stir in coconut and flavorings. Pour batter into a greased and floured 10" tube pan and bake at 325~ for 1 hour and 30 minutes or until a wooden pick inserted in center of cake comes out clean. Cool in pan 10 minutes; remove from pan and cool completely on a wire rack.

Recipe:
Preheat 325 *F. 165 C. Bake 60 - 70 minutes.
3 cups all purpose flour ( I used 3 and 1/4 cups cake flour)
1/4 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground nutmeg
1 cup butter (2 sticks) room temp
2 1/2 cups sugar
2 teaspoons vanilla extract ( I used 3)
2 teaspoons rum or rum extract
6 large eggs
1 cup eggnog
Syrup (optional):
1/3 cup water
1/3 cup sugar
1 teaspoon vanilla extract
1 to 2 teaspoons butter
Rum Glaze:
2 cups powdered sugar
1/8 teaspoon salt
1 - 1 1/2 tablespoons milk
1 tablespoon rum
1 - 1 1/2 tablespoon heavy whipping cream (optional)

1 Cake Mix, Yellow or Vanilla
2 Eggs, beaten
1/4 Cup Butter, melted
1 1/2 Cups Eggnog
1/8 Teaspoon Nutmeg
1/4 Teaspoon Rum Extract or Vanilla Extract
1/4 Cup Sugar (for dusting the pan)
Instructions
How to Make Eggnog Bundt Cake
Add the cake mix, eggs, melted butter, Eggnog, nutmeg, and rum extract to the bowl of a stand mixer.
Use the whisk attachment to mix the ingredients for 2-3 minutes until the batter is light and fluffy.
Prepare the bundt pan by spraying it with nonstick cooking spray, then sprinkle with sugar, completely coating the pan.
Pour the eggnog cake batter into the bundt pan and bake at 350 degrees for 35-40 minutes or until a toothpick inserted comes out clean.
Remove the cake from the oven and allow it to cool in the pan on a cooling rack for about 20 minutes.
Place a cooling rack over the pan and invert to remove the cake from the pan.
Allow the cake to completely cool, then serve.

3 sticks of unsalted butter (room temp)
5 eggs (room temp)
1 cup of eggnog (room temp)
1/2 teaspoon of baking powder
1/4 teaspoon of salt
1/2 teaspoon of nutmeg
1 teaspoon of cinnamon
1 Tablespoon of vanilla extract
1 teaspoon of magic line butter vanilla extract or 1 teaspoon of butter extract
Glaze:
1 1/2 cup of powdered sugar
3 Table spoons of Eggnog (more if needed)
1/2 teaspoon of vanilla extract
1/2 teaspoon of rum extract
1/8 nut meg
*Combine all dry ingredients (including nutmeg, cinnamon)
*Bake for 1 hour and 15 mins
*Oven temp 325 degrees
