Creamy Southern Chicken Spaghetti with Rotel | Comfort Food | Restless Chipotle
The creamiest cheesy chicken spaghetti recipe ever with just the right amount of spicy Rotel tomatoes!
It's a great way to use up leftover chicken, too!
This easy casserole is ready in just 30 minutes and can be assembled a day or two ahead of time, or frozen for up to 3 months, and baked when you're ready to eat.
It's a must at potlucks - great way to feed a crowd or a hungry family for cheap!

1.5 pounds boneless chicken breast, or more if desired cooked and shredded or cubed
16 ounces spaghetti, broken in 2-inch pieces
29 ounces cream of chicken soup, (2 - 14.5-ounce cans condensed)
10 ounces diced tomatoes & green chiles (I use Rotel tomatoes)
6 ounces cream cheese (I use Philadelphia brand - and recommend it)
3 cups Cheddar cheese, shredded from a block - divided use (12 ounces total)
¼ cup heavy cream, you can use milk if you prefer
1 cup bell peppers and onions mixed
Instructions
Cook the chicken breast if it's raw then dice or shred it and set aside - or used cooked rotisserie chicken.
If using fresh onions and peppers saute them in a little butter until soft.
Break the spaghetti into 2-inch pieces and cook until tender in boiling, salted water.
Drain and set aside.
Mix the soup, RoTel, and cream cheese in a microwave safe dish.
Heat, stirring every minute, until the mixture is smooth and creamy.
Stir in 2 cups of the cheese.
Stir until smooth. You may need to add some milk or cream to thin it down if it seems too thick.
Stir the cooked chicken into the cheese mixture.
Stir the pasta, onions and peppers into the chicken and cheese mixture.
Spoon into a greased 13x9-inch casserole dish.
Top with remaining 1 cup cheese.
You may stop here, cover with plastic wrap then aluminum foil, and freeze for up to 3 months or refrigerate a day or two until ready to bake.
Bake at 350F 20 minutes or until heated through and the cheese has melted.
Remove from the oven.
Let stand for about 5 minutes for the cheese to settle then serve hot.

The Best Creamy Chicken Spaghetti Recipe On The Internet
Cooking With Tammy Seasoning:
Chicken Ingredients
oil
3 small boneless skinless chicken breasts halved
salt to taste
black pepper
2 tsp chicken bouillon
2 tsp Italian seasoning
2 tsp cajun seasoning no sodium brand
2 tsp All-purpose chicken seasoning low / no sodium brand
Sauce Ingredients
4 Tablespoons butter
1 small yellow onion, diced
3 cloves garlic, minced
4 tbsp flour
1 1/2 cups chicken broth
1 cup heavy cream
1 10.5 oz can cream of chicken condensed soup
4 oz. cream cheese, softened
1 1/2 cup cheddar cheese, shredded
1 cup mozzarella cheese, shredded
1 10.5oz can rotel mild
red pepper flakes & chopped parsley, to garnish
1 16 oz box spaghetti cook til al dente
Sprinkle a small amount of chicken bouillon ground black pepper and salt onto the chicken, followed by Cajun seasoning, all purpose chicken seasoning, Italian seasoning, garlic powder.
Add a small drizzle of oil to the skillet, brown the chicken on both sides. Cook thoroughly for about four minutes per side, or until the chicken reaches an internal temp of 165°F.
Place on a plate and set aside.
Add pasta to boil in water and cook until al dente.
Using the same pan add butter, onions, Cook until it becomes translucent
Add the garlic and cook until it becomes fragrant.garlic
Add small amounts of flour at a time while constantly stirring /whisking.
Add the chicken stock while stirring to the glass bottom of the pan.
Add the heavy cream and continue to combine.
Lower the flame and add the cream of chicken condensed soup.
Add the cream cheese, and allow the cream in the sauce to break down and come together.
Slice the chicken breast to the desired preference slice, dice or cube.
Add a small handful of both cheeses to the sauce and combine.
Add the rotel and combine.
Add the pasta, the pasta and fold the pasta into the sauce before adding the chicken pieces and combining.
Using a 9 x 13 casserole dish layer half of the creamy pasta into the dish, sprinkle a small amount of cheese on top.
Add the second layer of pasta, add the remaining amount of cheeses.
Garnish with parsley, and a small amount of red chili flakes if preferred.
Play into your 400° oven and allowed to bake for about 15- 20 minutes uncovered.
Broil for 1-2 minutes at 475F.
