GERMAN OVEN PANCAKE WITH APPLE & PERSIMMON COMPOTE
COOK TIME: 20 MIN
PREP TIME: 10 MIN
SERVES: 4
INGREDIENTS
OVEN PANCAKE:
½ stick salted butter, cut into cubes
6 eggs
1 cup milk
1 cup flour
1 teaspoon vanilla
1 teaspoon sea salt
APPLE & PERSIMMON COMPOTE:
2 pink lady apple, thinly sliced or small diced
2 fuyu persimmon, thinly sliced or small diced
6 tablespoons salted butter
1/2 cup maple syrup
dash of cinnamon
dash of nutmeg
DIRECTIONS
OVEN PANCAKE:
In a 15 inch cast iron pan or a 9 x 12-inch glass baking dish, add ½ stick of butter. Warm the pan and melt the butter in the oven while it is preheating to 425 degrees. Be sure to keep an eye on it so that the butter does not burn before the oven is fully preheated.
Using a blender or mixing bowl with an immersion blender, add each ingredient one after the other while blending. Add the eggs, milk, flour, vanilla, salt and blend on medium to high until frothy, about 30 seconds to 1 minute after all ingredients have been added.
Once the oven is up to temperature and butter has melted, remove the baking pan from the oven, pour in the mixture, and return the pan to the oven. Bake for 20 minutes, until golden brown and the sides have puffed up. Enjoy hot out of the oven!
COMPOTE:
In a saucepan on medium heat, melt butter, add apples, persimmons, cinnamon, and nutmeg, sauté for 6 - 8 minutes. Add the syrup and let it simmer on medium heat, stir occasionally, for about 10 more minutes, until your pancake is ready to serve!

Blueberry Dutch Baby - German Pancake - Food Wishes
There are few breakfast/brunch items as delicious, and visually impressive as the Dutch Baby, and when you consider how fast and simple they are to make, you have to wonder why they aren’t on every restaurant menu. Maybe one day, but for now we’ll just make them at home, preferably with a handful of sweet blueberries tossed in.
