1/2 c Nonfat milk
1/2 c Flour
2 tb Granulated sugar
1/2 ts Vanilla
1/4 ts Salt
Cinnamon 2 Apples; peeled & sliced
1 tb Butter
3 tb Light brown sugar; packed
Powdered sugar :
yogurt sauce----- 1/2 c Plain nonfat yogurt
1/4 c Applesauce
Combine egg substitute, milk, flour, granulated sugar, vanilla, salt and 1/8 teaspoon cinnamon in blender container. Blend until smooth. Set aside.
Saute apples in butter in oven-proof 8-inch skillet until lightly browned. Sprinkle with brown sugar and dash of cinnamon and cook until brown sugar melts. Pour batter over apples. Bake at 400 degrees about 20 minutes or until pancake is light brown and puffed. Remove from oven and sprinkle with powdered sugar and cinnamon to taste. Serve immediately with Yogurt Sauce. YOGURT SAUCE: Combine yogurt and applesauce. Chill until serving time. Makes 3/4 cup. Each serving contains about: 212 calories; 259 mg sodium; 9 mg cholesterol; 3 grams fat; 39 grams carbohydrates; 7 grams protein; 0.47 grams fiber. Presented by: Donna Deane, L.A. It’s apple picking season on Delmarva and we have some beautiful ones in the DelmarvaLife Kitchen. Chief of Community Relations with the Delaware Department of Agriculture‘s Delaware Grown program, Stacey Hofmann shows us how to make a Puffy Apple Pancake.
Puffy Apple Pancake
Ingredients
2 Tbsp butter
2 Tbsp brown sugar
½ tsp ground cinnamon
1 medium apple (Gala, Fuji), cored, peeled, sliced
2 large eggs
½ cup milk
¼ tsp salt
Directions
Preheat oven to 400°F. Melt butter in a 9-inch pie plate.
Remove from oven, brush butter on sides of pie plate. Sprinkle brown sugar and cinnamon on bottom of pie plate. Arrange thinly sliced apples over sugar.
In a bowl, whisk together eggs, milk, and salt. Pour over apples.
Bake for 30-35 minutes or until puffy and deep golden brown.
Remove from oven and immediately loosen edge of pancake. Turn upside down on to plate.
Handling & Storage
Apples should feel firm to the touch and be free of bruises.
Place apples in a plastic bag and refrigerate in the crisper for up to a month.
Do not peel or slice an apple until ready to use or it will begin to brown. Dip slices into lemon juice to slow down the browning process.

FLUFFY PANCAKE RECIPE
Ingredients
1½ Cups | 190g Flour
4 Teaspoons Baking Powder
Pinch of Salt
2 Tablespoons Sugar (optional)
1 Egg
1¼ Cups | 310ml Milk
¼ Cup | 60g Melted Butter + more for cooking
½ Teaspoon Vanilla Essence
Instructions
In a large bowl mix together the flour, baking powder and salt with a wooden spoon. Set to the side.
In a smaller bowl crack in the egg and pour in the milk.
Add the melted butter and vanilla essence to the egg and milk and use a fork to mix together until everything is well combined.
Make a well in the dry ingredients and pour in the wet. Fold the batter together with a wooden spoon until there are no longer any large lumps.
To cook the pancakes heat a heavy based pan like cast iron over medium low heat. When the pan is hot add a small amount of butter and ⅓ cup of the pancakes batter.
Cook the pancake for 2-3 minutes each side. Repeat with remaining batter.
Serve the pancakes stacked high with butter and maple syrup. Enjoy.
Notes
You can add other flavourings to the pancakes such as blueberries or chocolate chips. Add the extra ingredients at the same time as you combine the wet and dry ingredients.
