How To make Zucchini Yeast Bread
1 lb Zucchini -- grated
2 tb Salt
1 pk Active Dry Yeast
1 1/4 c Lukewarm Water
3 1/2 c Flour
-Olive Oil -- for brushing
1. In a colander, alternate layers of grated zucchini and salt. Leave
for 30 mins over a bowl or sink. Then squeeze out the moisture with your hands.
2. Combine the yeast with 1/4 cup of lukewarm water, stir, and leave
to dissolve for 15 mins.
3. Place the zucchini, yeast, and flour in a bowl. Stir together, and
add just enough of the remaining water to obtain a rough dough.
4. Transfer to a floured surface and knead until smooth and elastic.
Return the dough to the bowl, cover with a plastic bag, and leave to rise in a warm place until doubled in size, about 1 1/2 hrs.
5. Grease a baking sheet. Punch down dough with fist and knead into a
tapered cylinder. Place on baking sheet, cover, and leave to rise in a warm place until doubled in volume, about 45 mins.
6. Preheat oven to 425 F. Brush with olive oil and bake until golden,
40 to 45 mins. Cool on a wire rack.

ZUCCHINI BREAD RECIPE
makes 2 loaves or 24 muffins
4 eggs (beat until foamy)
2/3 C oil
1 C sugar
2 C brown sugar
3 1/2 C grated zucchini (about 1 ½ lbs)
1 Tbsp real vanilla
4 C flour
1 ½ tsp salt
2 1/2 tsp baking powder
1 Tbsp cinnamon
1 C nuts
2 C Chocolate chips (optional)
Preheat oven to 350
In a medium bowl beat the eggs until foamy
Add the oil, sugar, brown sugar and vanilla – mix well
Add the zucchini and mix
In a large bowl mix the flour, baking powder, salt, and cinnamon, whisk
Add the wet to the dry and blend
Add the nuts (and/or chocolate chips)
Pour into two grease 8 1/2 x 4 1/2 loaf pans
Bake for 55 mins
** For Chocolate Zucchini Bread substitute ½ C flour for ½ C Cocoa.

Delicious and healthy bread without kneading. You can add any spices you want or without any spices. It is delicious if eaten as is or with cheese or yogurt along with tea. You can add green and red peppers, which also give a very delicious flavor
Ingredients :
2 cups shredded zucchini
1 cup chopped green onion
2 cups flour or more
1 tablespoon instant yeast
2 teaspoons salt, or to taste
1 teaspoon turmeric
1 teaspoon curry
1/2 teaspoon black pepper
1/4 teaspoon red hot pepper
1 tablespoon dry parsley or 1/2 cup fresh
1 teaspoon baking powder
1 1/2 cups of water gradually add the water. The dough should be soft and can be poured into the baking tray.
2 tablespoons olive oil
Note:
You can add more flour if you add more water than necessary
The dough should be very soft and easy to pour into the baking tray
