• 1 cups all-purpose flour
• 1/2 cup whole wheat flour
• 1/2 teaspoon salt
• 1/2 teaspoon baking soda
• 1/2 teaspoon baking powder
• 2 teaspoons ground cinnamon
• 1/2 cup unsweetened applesauce
• 1 cup honey
• 1 large egg
• 1 teaspoon vanilla extract
• 1 cup grated zucchini
✅Instructions
00:00:23 - How to grate zucchini for zucchini bread
1️⃣ 00:00:16 - Preheat oven to 325 degrees F and lightly grease one 8x4 inch loaf pan.
2️⃣ 00:01:01 - In a large mixing bowl, stir together flour, wheat flour, salt, baking soda, baking powder, and cinnamon.
3️⃣ 00:01:25 - Pour in applesauce, honey, egg, and vanilla extract until combined.
4️⃣ 00:02:10 - Use a rubber spatula to fold in grated zucchini. Transfer to the prepared pan.
5️⃣ 00:02:39 - Bake 50-60 minutes until a toothpick inserted into the center comes out clean.

Recipe: Apple Zucchini Bread
This Apple Zucchini Bread is the perfect late summer/early fall treat. It’s lightly sweetened with honey and made with whole wheat flour to help make it blood-sugar friendly. One slice has 97 mg phosphorus and 150 mg potassium, so it’s the perfect kidney friendly dessert that’s also nutritious enough to eat for breakfast. Let us know if you want to give this recipe a try!
Apple Zucchini Bread (Makes 12 servings)
Ingredients:
1 cup shredded zucchini, excess liquid drained (about 1 medium zucchini)
1/2 cup almond milk
1/2 cup honey
2 eggs
1 tsp vanilla
1/3 cup oil
2 cups white whole wheat flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp ginger
1/4 tsp nutmeg
1 cup peeled and diced apple
1 tbsp brown sugar for topping (optional)
Directions:
Preheat oven to 325 degrees F. Grease a 8x4 inch loaf pan with nonstick cooking spray.
To a large bowl, add shredded zucchini, honey, eggs, almond milk, vanilla, and oil. Mix until well
combined. Set aside.
To a medium bowl, add flour, baking soda, and spices. Stir to combine.
Gradually add dry ingredients to wet ingredients. Fold in diced apples. Stir until just combined. Be careful not to overmix.
Pour batter into prepared loaf pan. Sprinkle brown sugar on top if using. Bake at 325 degrees F for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Let cool completely before slicing and serving.
Nutrition facts (per 1 slice, without brown sugar): 189 calories, 4 g protein, 8 g fat, 29 g carbs, 3 g fiber, 97 mg phosphorus, 150 mg potassium, 124 mg sodium

Full written recipe of Apple Zucchini Bread
Ingredients:
1 red apple, grated
½ zucchini, grated
¼ cup vegetable oil
1 orange, zest
1½ cups refined flour
1 teaspoon cinnamon powder
½ teaspoon baking powder
½ teaspoon baking soda
½ cup castor sugar
1 egg
A pinch of salt
Method:
1. Preheat the oven at 165°C.
2. In a bowl, put flour, cinnamon, baking powder, baking soda, mix well and leave aside.
3. In a bowl, add oil, zest of orange, grated red apple, grated zucchini and mix well. Put castor sugar and mix well.
4. Fold all the dry ingredients in the apple mixture.
5. Crack the egg in a bowl and keep folding till all ingredients are mixed well.
6. Line up a bread mould (8x4 in) with parchment paper and pour the batter in the mould. Spread the batter evenly. And bake for around 45 minutes.
7. Remove bread, let it cool, slice evenly and serve.
