chopped Finely shred zucchini to measure 2 cups; set aside. Cream sugar and oil. Add eggs, zucchini, and vanilla; mix well. Combine flour, cinnamon, salt, baking soda and baking powder; mix well. Add raisins and nuts to dry ingredients. Combine with zucchini mixture; mix well. Pour into two greased and floured 9x5-inch loaf pans. bake at 350 deg F, 1 hour or until tests done. Let stand 10 minutes; turn out on wire rack to cool.

Zucchini Bread o 1-1/2 to 2 cups grated zucchini- loosely pack – don’t drain any liquid o ¼ cup light or dark brown sugar (your preference) o 1 cup granulated sugar o 1/3 cup cooking oil – vegetable, canola, corn, your preference, but not olive oil o 2 large eggs o ½ cup applesauce o 1-1/2 cups flour o 1 tsp vanilla extract o ½ tsp salt o ½ tsp baking powder o ½ tsp baking soda o ½ tsp cinnamon o ¼ tsp nutmeg o Optional ingredients include raisins, walnuts, chocolate chips, etc. o 1 9x5 loaf pan greased (can also coat with either cooking spray or oil)
Preheat oven to 350 degrees F. In a large bowl mix your wet ingredients till combined: o Zucchini o Cooking oil o Applesauce o Vanilla extract o Eggs (beaten first) o Granulated sugar o Brown sugar o Any optional ingredients can go in here
In a second large bowl make your dry mix with remaining ingredients: o Flour o Salt o Baking powder o Baking soda o Cinnamon o Nutmeg
Add dry ingredients to the wet mix and blend to a batter-like consistency. Do not over mix. Pour batter into greased pan and put in the preheated oven for 50 - 55 minutes. I like to put it over a sheet pan to prevent any spills and to make moving in and out of the oven easy. Cook until a toothpick comes out clean and bread has firmed up and begun to brown on top. Let cool for 10 minutes or until the bread pulls in from the pan. Remove from pan and cool completely. Cover and cool in the fridge overnight. Can keep refrigerated for at least several days.
