Zucchini Parmesan (What to do with an overload of summer squash?)
If you've found yourself overloaded with summer squash, here is a great recipe to turn to: zucchini parmesan. Here, the zucchini and summer squash are sliced into rounds and roasted first; then layered with sauce and parmesan. There's no breading or frying, rather a bread crumb-parmesan topping blankets the final layer. In the oven, it crisps and caramelizes, and it's absolutely irresistible.

OVEN-FRIED ZUCCHINI
Preheat oven to 475 degrees F.
2 medium unpeeled zucchini, rinsed & dried
1/2 cup seasoned bread crumbs
3 tablespoons Parmesan Cheese
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked
1/4 teaspoon garlic powder
1/4 teaspoon smoky paprika
1 tablespoon water
1 tablespoon canola oil
1. In small mixing bowl add bread crumbs, parmesan cheese, salt, garlic powder, black pepper and smoky paprika. Whisk. Set aside.
2. Add water and oil to a 1-quart plastic bag. Set aside.
3. Cut the zucchini into quarters lengthwise. Cut each quarter into halves. Remove seeds with sharp paring knife. Cut each quarter into halves or thirds to make uniformed zucchini spears . Add cut zucchini into plastic bag with oil and water. Shake gently.
4. Roll each zucchini spear in the bread crumbs mixture until lightly coated. Arrange in a single layer on a baking sheet sprayed liberally with nonstick cooking spray.
5. Bake at 475 degrees for seven minutes or until golden brown.
Yield: four servings.

INGREDIENTS
3 medium zucchini, or about 4 cups grated zucchini
2 large eggs
2 cloves garlic, minced
1/2 tsp. dried oregano
3 c. shredded mozzarella, divided
1/2 c. freshly grated Parmesan
1/4 c. cornstarch
kosher salt
Freshly ground black pepper
pinch of crushed red pepper flakes
2 tsp. Freshly Chopped Parsley
Marinara, for dipping
DIRECTIONS
1. Preheat oven to 425º and line a baking sheet with parchment. On a box grater or in a food processor, grate zucchini. Using cheesecloth or a dish towel, wring excess moisture out of zucchini.
2. Transfer zucchini to a large bowl with eggs, garlic, oregano, 1 cup mozzarella, Parmesan, and cornstarch and season with salt and pepper. Stir until completely combined.
3. Transfer “dough” to prepared baking sheet and pat into a crust. Bake until golden and dried out, 25 minutes.
4. Sprinkle with remaining 2 cups mozzarella, crushed red pepper flakes, and parsley and bake until cheese is melted, 8 to 10 minutes more.
5. Slice and serve with marinara.

Ingredients
:
• Sliced zucchini
• A cup of bread crumbs
• 1 tsp of cajun spice
• 1 tsp of basil
• 1 tsp of garlic salt
• 1 tsp of pepper flakes
• Half a cup of parmesan cheese
• Egg wash
Instructions:
1. Combine the pepper flakes, garlic salt, basil, cajun spice, bread crumbs, and parmesan cheese
2. Start dipping the zucchini in the egg wash
3. Add the zucchini into the spice mix
4. Place the zucchini into a greased tray
5. Add 2 tsp of olive oil on top of your zucchini mixture
6. Bake it in your oven at roughly 450 degrees Fahrenheit (20 minutes)
7. Flip it halfway
8. Remove the baked zucchini with parmesan from the tray and place it on a plate

PARMESAN-ZUCCHINI HEALTHY BREAD
INGREDIENTS
1.1/3 cup olive oil, plus more for pan
2. 2 cups of all- purpose flour, plus more for pan
3.1/3 cup milk
4. 2 large eggs
5. 1 cup grated parmesan cheese
6. 2 teaspoons of baking powder
7. 1/2 teaspoon sea salt
8. 1/4 teaspoon ground pepper
9. 1 medium zucchini coarsely grated
METHOD
1.Preheat oven to 375 F
2 .Grease a 9 inch loaf pan with oil
3. Grate the zucchini in a grater. Set aside.
4. In a small bowl, whisk oil, milk and eggs.
5.In a large bowl, whisk flour, Parmesan, baking powder, salt and pepper; add in zucchini
6.Transfer the batter to prepared glass or pan.
7.Press in gently.
8.Bake until a toothpick inserted in center comes out clean, 60 to 70
minutes.
*tent with a foil if the bread starts to brown too quickly.
9.Cool 15 minutes in a pan ; turn out bread onto a rack to cool completely .
