How To make Title: Cranberry Corn Muffins
Servings: 12
3/4 c flour
1/2 c whole wheat flour
1 c yellow corn meal
1/3 c sugar
2 t baking powder
1/2 t baking soda
1/4 t salt
2/3 c buttermilk
1/3 c orange juice
1/3 c vegetable oil
1 egg
4 t orange rind
1 c cranberry
Preheat oven to 400. In a lg. bowl, combine the flours, meal, sugar, baking powder, baking soda, and salt. In a 2-c measure or sm. bowl, combine the buttermilk, orange juice, oil, egg, and orange rind. Add buttermilk mixture to the flour mixture, stirring the ingredients. till they are just moist. Stir in the cranberries. Distribute the batter among 12 greased muffin cups. Place the muffin tin in the hot oven, and bake the muffins for 20-25 min.

These muffins were amazing !!!!
Corn Muffins 1 for 4 FSP / 2 for 7 FSP
1 box jiffy corn muffin mix
1 egg
1 can creamed corn
Optional: chopped jalapeño peppers
Preheat oven to 400. Combine all ingredients and mix well.
Spray muffin tin with cooking spray and spoon evenly into 12 muffin cups. Bake for 18-22 minutes until golden brown.

Cranberry & carrot muffins are the perfect thing to hit the spot at breakfast. Easy to make and a great way to include fruit and vegetables into your day.
Ingredients:
2 cups of flour
1/2 teaspoon of salt
1 tablespoon baking powder
2 teaspoons pumpkin spice
3/4 cup of sugar
1 teaspoon vanilla
2 eggs
4 tablespoons butter
1/4 cup vegetable oil
1/2 cup of milk
3/4 cup shredded carrots
1 cup of cranberries

Hey family!!! In today's video we're cooking some Steakhouse Stew and Jalapeno Corn Muffins!

Mexican Cornbread Muffins
Mexican Cornbread Muffins
1 cup Yellow Cornmeal
3/4 teaspoon Baking Soda
1/2 teaspoon Salt
1 cup Buttermilk
2 eggs
1/4 cup vegetable Oil or Corn Oil
1 small can (8 ounces) Creamed Corn
1 small Onion, chopped
1 to 2 tablespoons Jalapenos, chopped, picked or fresh
8-ounces Shredded Cheddar Cheese
Mix first 3 dry ingredients together then add the rest and stir together. Spray a muffin tip with non-stick cooking spray and fill each cup with 1/4 cup worth batter. Bake at 400 degrees F for 22 to 25 minutes until golden brown. Let cool a couple of minutes then turn out onto a wire rack to finish cooling a bit. Good while they are still warm or room temp. Enjoy with your favorite pot of beans, soup, chili or simply with a glass of sweet tea.
