1 and a 1/2 tsp baking powder
2 eggs
3/4 cup of milk
1/3 cup of oil
pinch of salt
1 cup or 3/4 cup of sugar
1 tsp vanilla

PRINT RECIPE for Apple Oatmeal Muffins:

RECIPE: Apple Oatmeal Muffins
INGREDIENTS:
1 medium apple, chopped or shredded
1½ cups rolled oats
¼ cup vegetable oil
1 - 2 eggs (optional)
½ teaspoon Kosher salt
½ cup raisins, chopped dates, or dried cranberries
⅓ cup nuts, chopped
½ - 1 teaspoon cinnamon
Cooking spray
INSTRUCTIONS:
1: Preheat oven to 375°.
2: Spray muffin pans with cooking spray.
3: Wash the apples. Quarter and cut out the core.
4: Chop apples on low speed in the blender or by hand.
5: Combine ingredients in a bowl. Let stand for a few minutes so the mixture can absorb the moisture.
6: Mix mixture together firmly with fingers or a fork.
7: Spoon mixture into muffin pans. Fill and round nicely.
8: Bake for 25 minutes or until muffins start to brown.
NOTES:
The eggs help the ingredients stick together. You can leave the eggs out and these muffins will still be delicious!
If the raisins are extra dry, soak them in cold water for at least 10 minutes. Then drain the water and add them to the recipe as instructed.
You can add more or less nuts and dried fruit as desired.
If you don’t have cooking spray you can wipe the muffin tin with vegetable oil.
Use rolled or old fashioned oats. Do not use quick oats.

Squash Muffins Recipe:
Two well beaten eggs, one cup cooked and strained squash, one cup milk, a little salt, two cups flour, two teaspoons baking powder, one tablespoon melted butte; after all the ingredients are mixed together, add melted butter last. Bake thirty minutes in a slow oven, having oven very hot when first put in.

Banana Date-Nut Mini Muffins
Banana Date-Nut Mini Muffins
1 cup mashed ripe bananas ( about 2 medium)
3/4 cup sugar
1/3 cup unsweetened applesauce
3 Tbsp canola oil
1 egg
3/4 cup all-purpose flour
3/4 whole wheat flour ( I used all purpose flour)
1-1/2 baking powder
1/2 baking soda
1/3 cup chopped dates
1/4 cup finely chopped walnuts
1 tsp grated lemon peel
In large bowl, beat bananas, sugar, applesauce, oil, and egg until well blended. Combine the flours, baking powder, and baking soda; gradually beat into banana mixture until blended. Stir in dates, walnuts, and lemon peel.
Coat miniature muffin cups with cooking spray or use paper liners. Fill half full with batter. Bake 350 degree for 12-14 minutes or until toothpick comes out clean. Cool for 5 minutes.
These are delicious!
