Vegan Gluten Free Orange Cranberry Breakfast Muffins
Welcome to my channel – Chatting with Chops. My name is Karen and I make fun and entertaining videos that might teach you something.
I take regular baking recipes and try to convert them to vegan or sometimes gluten free and vegan recipes. Sometimes I get a great dessert and sometimes I get something I didn’t expect.
A gluten-free diet is a nutritional plan that strictly excludes gluten, which is a mixture of proteins found in wheat, as well as barley, rye, and oats.
Baking 'vegan' is the fact that no animal-derived ingredients are used in any way.
Gluten Free and Vegan Cranberry Orange Muffins
(Original recipe before my adjustments cam from Annemarie Rossi)
2 cups gluten free flour I used tapioca flour
1 tsp baking powder
½ tsp baking soda
4 oz of unsweetened applesauce
¾ cup pure maple syrup
½ cup orange juice - really could use more orange juice (my daughter likes them to extra orangy)
⅓ cup melted coconut oil
1 ½ cup chopped cranberries
Preheat oven to 350 degrees fahrenheit and use muffin paper cups to line muffin tin
In a small bowl, stir together the flour, baking powder and baking soda.
In a large bowl, mix in the applesauce, syrup, orange juice, and coconut oil. Add the dry ingredients to the wet ingredients and stir to combine evenly.
Fold in the chopped cranberries. Transfer the batter to the muffin pan.
Bake for about 20 minutes, until a toothpick inserted in the center comes out clean. Cool on a wire rack before serving.
