How To make Title: Cranberry Pumpkin Muffins
Servings: 24
2 c flour
1 c whole wheat flour
1 c sugar
1 1/2 t cinnamon
1 t baking powder
1 t baking soda
3/4 t allspice
1/2 t salt
1/2 c butter
2 1/2 c pumpkin puree
2 egg
2 c cranberry
Preheat oven to 350. In a lg. bowl, combine the flours, sugar, cinnamon, baking powder, baking soda, allspice, and salt. Stir the ingredients. to mix them well. Add the butter, pumpkin, and eggs, stirring the ingredients. till they are just moist. Stir in the cranberries. Spoon the batter into 24 greased muffin cups. Place the muffin tins in the hot oven. Bake for 40 min. or till tester inserted in center comes out clean.

FROSTED PUMPKIN SPICE MUFFINS
INGREDIENTS:
MUFFINS:
2 large RIPE bananas
1 – 15 ounce can of pumpkin puree (not pie filling)
½ cup of Wanna Date Pumpkin Spice Date Spread
2.5 cups gluten free rolled oats
½ cup millet, ground
1 Tablespoon Pumpkin Pie Spice

1 cup GOLDEN raisins
PREPARATION:
Preheat oven to 350.
Using a potato masher, mash the banana, pumpkin puree, Wanna Date and pumpkin pie spice and until all ingredients are well incorporated. Stir in oats, millet and raisins and distribute evenly among 12 muffin cups. Bake for 40-45 minutes. Let cool completely before removing.
FROSTING:
1 cup roasted Japanese Sweet potato flesh
¼ cup Wanna Date Pumpkin Spice Date Spread
Mix ingredients together until smooth. Frost cooled muffins. Sprinkle with unsweetened coconut, if desired. Keep in the refrigerator.

Easy 1 Bowl Pumpkin Muffins - Ultimate Food Geek & Friends
Ben Starr, the Ultimate Food Geeks, hosts friends Chip and Jenni for some holiday baking in his kitchen. This is an ultra-simple, ultra-delicious pumpkin muffin recipe that is easily customizable with extra ingredients (chocolate chips, nuts, cranberries, etc.) that is made in a single bowl without a mixer. It's a great recipe for kids or beginning bakers, it's nearly foolproof, and results in an exquisitely moist, delicious muffin.

The kitchen scale I used both at my restaurant and at home: (You can spend less on a kitchen scale, but this one is perpetually accurate, easy to clean, and doesn't take weird batteries.)
Yields 12 muffins (or more, depending on size, and if you add extra ingredients)
Preheat oven to 400F (204C)
In a large bowl, combine:
8oz (227g or 1 cup) white sugar
3.7oz (105g or 1/2 cup firmly packed) brown sugar (dark or light)
2 eggs
1 can (15oz or 425g or scant 2 cups) pumpkin (NOT pumpkin pie mix)
3.75oz (106g or 1/2 cup) melted coconut oil OR 3.5oz (99g or 1/2 cup) vegetable oil
2 tsp vanilla
Stir until totally combined. Then scatter on top of the wet ingredients:
8.7oz (247g or 1 3/4 cups) all purpose flour
1 tsp baking soda
1 tsp kosher salt (or 1/2 tsp table or fine salt)
1 Tablespoon each cinnamon, ginger, and cardamom
1/2 tsp each clove and nutmeg
Gently fold the dry ingredients into the wet ingredients with a spatula until all the dry flour has disappeared. Fold in any additional desired ingredients. (Suggestions: fresh or dried cranberries or cherries, toasted nuts, pumpkin seeds, chocolate chips, etc.)
Scoop batter into lined muffin tin. Place on center rack of preheated oven, and immediately turn temp down to 375F (190C). Bake 20-25 minutes or until muffins test done.

How to Prepare Cranberry Nut Muffins
Kyong Weathersby and her husband Larry teach how to prepare vegan cranberry nut muffins.
CRANBERRY NUT MUFFINS (MINI SIZE)
2 c unbleached white flour
¼ c wheat germ
½ c turbinado sugar
1 T Ener-G baking powder
2 T ground flax seeds
½ c chopped walnuts
1 tsp sea salt
1 tsp coriander
½ c cranberry juice
2 T canola oil
1 tsp vanilla
1 (14 oz) can whole berry cranberry sauce
30 pieces walnut halves
Preheat oven to 350 degrees. Mix all ingredients except cranberry juice, canola oil, vanilla, cranberry sauce and walnut halves. Add cranberry juice, canola oil, cranberry sauce and vanilla. Mix well. Transfer into an oil sprayed mini muffin pan. Put one (1) piece of walnut half on the top of each muffin. Bake for 30-35 minutes or until a tooth pick inserted in the center comes out clean. Cool for 5 minutes. Remove from pan. Cool complete on cookie rack.
